Getting a nutritious breakfast has been almost too easy since my family started the routine of grabbing their new favorite Chocolate Breakfast Muffins before heading out the door in the morning.

These chocolate breakfast muffins are so good it's hard to believe they are nutritious! I can't believe my kids are eating healthy again, this is a keeper!

The mornings in my home have been known to be chaotic but that is a thing of the past thanks to Carnation Breakfast Essentials®. Now that we have created this delicious recipe for breakfast muffins that save us time every morning, we decided to commit to other healthy activities as well.

Instead of hitting the snooze button like she used to my daughter now has extra time to make her bed, pack her own lunch for school, and get some other chores done. This leaves her with more time throughout the day and we have committed to being more active by using the time we save for exercise.

Now that I have made these delicious chocolate breakfast muffins, my husband is actually eating a nutritious breakfast in the mornings. That is a huge improvement because some days he has been known to work 14 hours on an empty stomach. I can’t stand to see him starve himself just because he just doesn’t have any convenient options that fit into his morning routine.

I can certainly understand the struggle to find time to make breakfast in the mornings and I think most parents can relate, most mornings, especially school mornings are crazy!

Carnation Instant Breakfast

I headed to Sam’s Club to pick up my Carnation Breakfast Essentials® 30-Pack of Powder and found it by the cereal aisle.

What you will need for the Chocolate Breakfast Muffins

  • 2 Eggs
  • 2 Teaspoons of Vanilla Extract
  • 2 Bananas
  • 2 Packages of Chocolate Carnation Breakfast Essentials®
  • 3 Teaspoons of Baking Soda
  • 2 Cups of Flour

For the Topping you will need:

  • 1 Package of Chocolate Carnation Breakfast Essentials®
  • 1 1/2 Tablespoons of Milk
  • 4 Tablespoons of Honey

For the Chocolate Breakfast Muffins

Preheat oven to 350 degrees Mix Bananas, eggs, extract, baking soda, chocolate instant breakfast together. Add flour slowly, about a half cup at a time. This recipe will make 12 Chocolate Breakfast Muffins.

Mixing Food

Add to cupcake liners and bake for about 10-12 minutes or until a toothpick inserted in the center comes out clean.

Muffins

For the topping you will add ingredients together and mix in the milk a little bit at a time until the mixture has reached desired consistency. Be careful not to add too much and stir well in between each addition.
