I love a good crockpot meal. They save me so much time in the evenings and it’s always nice to know throughout my day that dinner is taken care of when I get home.

Sometimes the mornings can be really crazy so even with the time-saving crockpot meals, getting them ready in the morning can be hard. I am not trying to live a life that has me measure things and use the stove at five in the morning. 

So I decided to share my Healthy Crock Pot Vegetable Beef Stew that is so easy to prepare it will not only save you time in the evening but it’s a quick meal to fix during those busy mornings!

Variations on this Recipe 

There are many ways to customize this recipe using your favorite vegetables. Add in green beans, corn, potatoes, or whatever you would like.

I try to keep this recipe as simple as possible so I stick with some family favorites that are easy to buy frozen.

If you would prefer to use fresh vegetables feel free to swap that out. Just keep in mind that fresh vegetables will require more prep-work and that will mean this recipe is no longer a true crockpot dump meal.

Why Make this Vegetable Beef Stew in the Crock-Pot?

The real question is, why not? Having the ability to just dump some ingredients into a pot and walk away makes this an easy meal to prepare anytime. Especially on those busy mornings and those evenings when you just don’t feel like cooking.

Not only is this one easy to prepare for your family but it is also the perfect meal to serve when you have guests. No need to cook two meals to accommodate special diets, this meal has no added sugar, is gluten-free, dairy-free, and made without preservatives.

My favorite part about this Healthy Crock Pot Vegetable Beef Stew is being able to use frozen vegetables, which means there is almost no chopping, cutting, or preparing required.

What You Will Need to Make this Vegetable Beef Stew

All you will need to make this easy and tasty dish is:

  • 1 and a 1/2 pound sirloin tip roast
  • 2 bags of frozen carrots
  • 1 bag of frozen peas
  • 1 onion
  • 3 Tablespoons of Garlic
  • 2 Teaspoons Salt
  • 2 Teaspoons of Pepper
  • 4 Cups of Water

You can double this recipe easily and adjust the number of vegetables or meat to fit what works for your family.

How to Make this Healthy Crock Pot Vegetable Beef Stew

Slice the meat in half and brown each side of both pieces. Add them to the crockpot. Dice an onion or chop roughly if you enjoy bigger pieces like me, add them to the crockpot. If you really want a simple meal, pick up a frozen bag of onions to avoid extra prep work. 

Put the rest of the vegetables into the crockpot and add the 4 cups of water. Sprinkle seasoning on top and stir all ingredients together until they are well combined.

Cook on high in the crockpot for about 6-8 hours. You know the meal is ready when the meat begins to fall apart and shred throughout the broth.

The only bad thing about this meal is that if you are home while it is cooking, you are going to be counting the seconds until it is done because it makes your house smell amazing!

  • 1 14 ounce bag of frozen peas
  • 1 onion
