Easy Vinaigrette Dressing SCD Friendly

I was diagnosed with Ulcerative Colitis earlier this year and was given insane amounts of pills to ingest three times a day for the rest of my life. I decided this was not the answer to my stomach issues and am now trying other ways to actually “CURE” my illness instead of mask it’s symptoms.

 I have been following the SCD diet for 2 months and have been trying new things everyday. At first I felt restricted by the limited foods that are SCD “legal”. Then I decided to look at it a different way, I am eating real food for the first time in my life and there is an outline provided for me to make it easier. So I have tried many different combinations of the “legal” foods and came up with some recipes that I think would be great even if you aren’t on the SCD diet. I will always eat them even if I get off the diet someday.

So here is a delicious Easy Vinaigrette Dressing that will make you want to have a salad with dinner.

Salad Dressing Ingredients

What you’ll need:

1 teaspoon Garlic Powder

2 squirts of Lemon

1 teaspoon Salt

2 teaspoons Pepper

3 tablespoons Olive Oil

4 tablespoons Vinegar

Mix together and Enjoy!


I know it seems easy and that is because it really is! I was so afraid to try a dressing at first it seemed out of my comfort zone. I had never attempted to make any kind of dressing before but I am glad that I got past my fear of failure and tried.

There are many variations to this recipe that you could try out such as:

For a less acidic dressing cut the vinegar in half and leave the rest of the ingredients.

Add in a teaspoon of Dijon Mustard for a creamier dressing.

Fresh minced garlic gives this dressing a new flavor and texture.

Add a dash of Parmesan Cheese or shredded Colby Jack.

Dice Tomatoes and let sit in dressing to marinate with Parmesan cheese to create a bruschetta type dressing.
