I first created this recipe when my husband was making Shake n Bake for dinner since my daughter and him loved that stuff. I also enjoy the taste of it but it isn’t allowed on the Specific Carbohydrate Diet, which is a diet for health not losing weight although I have lost 40 lbs while eating pizza, ice cream, cookies, and lots of yummy foods on this diet, learn more about that by clicking here.

When I created this Parmesan & Herb Baked Chicken Breast Recipe, my intention was to have something to satisfy my Shake N Bake craving so I didn’t feel left out when my family enjoyed their meal. I never expected my husband to try my chicken breast recipe and decide he enjoyed it more than his Shake N Bake, but that is exactly what happened.

He even went as far as telling me that the next time we were going to make a Baked Chicken Breast Recipe, which is usually about once a week in my house, he wanted me to make my Parmesan & Herb Baked Chicken Breast for the entire family and to not even bother with the prepackaged stuff.

Every week since then and sometimes twice a week, I have made this recipe for the whole family and they eat every bit of it! We even make extra so that my husband can make a baked chicken breast and cheese sandwich for work the next day. He just puts mayonaise on it and even though it’s cold, he loves it!

To make this recipe you will need a Baking Sheet, Silicone Mat or Parchment Paper, Bag for Shaking the Mix, Almond Flour, Grated Parmesan, Chicken Breast, Basil, and Garlic.

Preheat oven to 400 degrees. Rinse your chicken breast after removing it from the packaging, you should always do this but just in case you forgot, this part helps the breading stick. Cut chicken breasts into cube shapes roughly about 2 inches tall by two inches wide.

It is important to keep the size uniform throughout to ensure they will cook the same. Mix all of the ingredients into a bag and add a few cubes at a time, shake the bag a few times or until the chicken is coated evenly, then place on baking sheet lined with parchment paper or silicone mats.

Bake for 20 minutes and enjoy!

  • 1 lb. Chicken Breast
  • 1 Cup Almond Flour
  • 1 tablespoon Garlic Powder
  • 1/3 cup of Grated Parmesan
  • 2 teaspoons of Basil

  4. This recipe is perfect because it is both healthy and gluten free. My husband loves fried chicken but of course he cant have it as often as he would like. I have cooked with almond flour before and enjoy the taste a lot.

Congratulations on losing 40 lbs, that is huge for you – and from looking at your post on your disease and the book you found, it sounds like a healthy plan without pills – We did something similar, but with Yeast Allergies. Which the doctors were prescribing pills for my hubby – but my nutritionist convinced him to eat differently and it works for him and I’ve been eating healthier every day for years and find new ways to get better.

  11. Hi, is garlic powder scd legal? New to the diet and really want to try this recipe. Sounds delicious!

    • There are some brands that are legal but to be safe I make my own. I just dehydrate garlic cloves and then grind them down to a powder. It’s simple and you will know it’s SCD legal because you made it.
