Peanut Butter Pie

Peanut Butter Pie

When it comes to making pies, it just doesn’t get any easier than this Peanut Butter Pie. There is no baking required and very little skill involved in the making, it is the easiest pie I have ever made and one of my favorites.

The first time I ever even heard of Peanut Butter Pie was when I mentioned to my mother-in-law that I like peanut butter and she immediately insisted that as a peanut butter lover, I have to try this peanut butter pie.

Peanut Butter Pie

My first thought was, peanut butter in a pie? That’s awesome! My second thought was what if I don’t like it, how am I going to pretend that I do?

I had just moved to Illinois and met my mother-in-law for the first time, so I was worried about offending her if I didn’t enjoy her cooking. This may be due to a story my mom has always told me about when she met my grandmother, her mother-in-law, for the first time.

Keep in mind my grandmother is a little Italian woman with a lot of spunk who may or may not have a few ties to the mafia. So picture this Jersey City, 1981 (That’s a Golden Girls reference in case you didn’t know, Sophia always reminded me of my grandmother.)

Anyway, my mom goes over for dinner and since she was raised by a woman who burns even a can of corn, she poured ketchup all over her spaghetti as she did with most meals her own mother cooked, to drown out the bad taste.

My grandmother was angry and offended thinking that my mom was suggesting that her food was terrible although she hadn’t even tried it yet. Once my mom explained the situation, all was well but I am sure it was extremely uncomfortable thankfully my grandmother loved my mom like her own over the years but I didn’t know if I could handle that kind of conflict with my mother-in-law.

So when my mother-in-law handed me a piece of her peanut butter pie, I was practicing a positive reaction in my head as I grabbed a piece with my fork. I was telling her that it was really good before I ever actually tasted it and as I got the words out the flavor sunk in and I was blown away by the deliciousness of this pie.

I asked for the recipe and over the years I changed a few things, not because it needed it, this pie was great but I am a habitual perfectionist so I had to put my own spin on it.

Before serving add a mixture of chocolate and caramel syrup to the top of the pie. Don’t skip this step, it really takes the pie to the next level.

Peanut Butter has to be one of my favorite foods, it goes well with so many other flavors...My top choice is CHOCOLATE! Although, it also pairs well with fruits like apples and bananas. This dessert would be great to whip up on short notice, I love no bake treats!

No bake sounds good to me. I bet it'd be even more amazing with crunchy peanut butter.
