The only way I can get my daughter to eat broccoli is if I cover it in cheese and serve it in the form of a casserole. So I try to do that as much as possible. Instead of having macaroni and cheese I serve up this easy to make delicious casserole and get some veggies in.
What you’ll need:
2 bags of broccoli
1/2 block of Velveeta cheese
1/4 cup butter
1 sleeve Ritz crackers
9×9 baking dish
Preheat oven to 400 degrees and boil the broccoli until soft (about 8-10 minutes)
Strain broccoli and add to baking dish
Slice Velveeta and cut into cubes, mix in with broccoli
Crumble Ritz crackers on top of the broccoli and cheese mixture
Melt butter in microwave and pour on top of casserole.
Bake for 10-12 minutes, until cheese has melted.
Spoon onto dishes and don’t worry about the mess, this dish isn’t meant to look pretty, it’s meant to taste great! My family loves it served with BBQ chicken.
