Frosted Pineapple Dessert Bars

Sometimes the best recipes are made in a panic.

These Frosted Pineapple Dessert Bars were inspired by the week-old pineapple rotting away on my counter.

I picked it up while at the grocery store because it was on sale and even though the sale price was still a dollar or so more than I would get excited about, it was a decent deal considering how overpriced pineapples are.

I imagined myself in the kitchen looking like something out of I Love Lucy, wearing an apron over my perfectly ironed dress while whipping up some kind of 7 layered pineapple perfection for my family.

I also had that song stuck in my head, you know that Pen Pineapple Apple Pen song?

My daughter was singing it before school that morning and I could not get it out of my head, I can’t stand it when that happens.

So I bought a pineapple, thanks, Melody.

Now that a week had gone by and this overpriced fruit had not been put to good use, I decided to create a new recipe.

I gathered ingredients to see what I had on hand to work with and despite the fact that I resembled a before photo for a fashion makeover, I still decided to whip up that pineapple perfection for my family.

I didn’t want to make that 7 layered things I originally had in mind because, in reality, I only have a couple of baking pans so I was in for like three layers max at this point.

So I settled on just one layer and boy am I glad I did, these Frosted Pineapple Dessert Bars turned out to be one of my husbands’ favorite desserts.

I love when I stumble upon something like that, there is nothing more satisfying in this world to me than to see my husband enjoy something I have made for him.

I also love when a dessert is made from scratch and super easy to recreate, lucky for me, these Frosted Pineapple Dessert Bars are both of those things!

Grab a 9 x 13 inch baking pan, grease that rectangular fella up and get started making these Frosted Pineapple Dessert Bars. 

All you have to do is mix all of the ingredients together ensuring the pineapple has been almost liquified in the blender and pour the mixture into the pan.

Bake in a preheated oven set at 350 for about 30-35 minutes.

The outside will begin to brown and look cake like when done.

Pull out of the oven and begin making the frosting to pour on top of the warm pineapple bars.

The frosting for these Pineapple Bars is just a simple cream cheese frosting.

In a mixer beat the frosting ingredients until well mixed.

Pour the frosting on top of the warm pineapple dessert bars when fresh out of the oven.

Refrigerate and serve when cold in order to enjoy the bars without a gooey mess, it tastes great both ways but is preferred cold.

Ingredients

  • 2 cups of all purpose flour
  • 1 cup of sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/2 of a Pineapple
  • CREAM CHEESE FROSTING
  • 1 stick of Butter
  • 1 8 oz cream cheese, softened
  • 1 tsp vanilla
  • 1 1/2 cup of powdered sugar

Instructions

    Preheat your oven to 350 degrees and grease a 9 x 13-inch baking pan.
    Make sure you blend the pineapple in a blender thoroughly before adding to the batter.
    For the bars, mix all of the ingredients together and pour them into the pan.
    Bake at 350 for about 30-35 minutes.
    The outside will begin to brown and look cake-like when done.
    Pull out of the oven and immediately begin making the frosting pour on top of the warm pineapple bars.
    In a mixer beat the frosting ingredients until well mixed. Pour on top of warm pineapple dessert bars.
