Healthy Chicken Soup Recipe

Just when we thought the cold weather was gone, we had an ice storm. We went from cooking on the grill in shorts one day to layering sweatshirts before stepping outside to warm up our cars. The weather is so unpredictable right now and doctors say the sudden drops in temperatures can cause ill effects to our bodies.

My daughter usually catches a cold during times like these and this is the time of year I want her at her healthiest so she can enjoy the warmer days, when we get them. So I have decided to boost our immune systems with a delicious Healthy Chicken Soup Recipe that tastes great and offers tons of vitamins and nutrients that our bodies need to fight off colds.

Healthy Chicken Soup Recipe

 

The great thing about this Healthy Chicken Soup Recipe is that it’s easy to make and fits in most restricted diets like the Specific Carbohydrate Diet. You can use many different types of chicken as long as there is a bone attached. I like to use chicken legs and chicken thighs the best, I usually use whichever is on sale because they basically taste the same in this recipe.

You can also use any veggies you would like but if you are following the Specific Carbohydrate Diet, carrots and celery are a great way to stay SCD legal and have a delicious soup at the same time.

Chicken Soup

What you will need:

6-8 Chicken Legs or 4-6 Chicken Thighs
3 Quarts of Water
5 carrots sliced into bite sized pieces
4 Ribs of Celery,chopped
1 Teaspoon Salt
1/2 Teaspoon Pepper

You can make a delicious soup with just the ingredients listed above but for a little bit more flavor you can add these spices as well as some of your favorites.

1/2 Teaspoon Parsley,1/2 Teaspoon Basil, 2 Tablespoons Garlic

Healthy Chicken Soup Recipe

Rinse Chicken under cold water and then place in Stock Pot. Add 3 Quarts of water and bring to a boil. Once the water has reached a boil, turn down heat to medium/low and let simmer until meat begins to fall of the bone. This may take about 3 hours.Healthy Chicken Soup Recipe
Once the meat starts to fall off the bone, remove the chicken from the pot. Leave the broth on the stove. Separate the bones from the meat and throw the bones away, add the meat back to the pot.
Add seasonings and vegetables. Stir well. Cook for another 30 minutes or until vegetables are soft.

      I love drumsticks too! It seems to be easier to pull the meat off of a drumstick than he thighs too!

    Trying this recipe today and it is driving crazy as the house has been smelling delicious all day as the soup slow cooks. Have had a little pre-taste, granted the vegetables are still crunchy but so flavorful. Cannot wait to devour a bowl!
