SCD Deep Dish Pizza Recipe (Gluten-Free SCD Pizza)

While living in the Chicago area I got used to eating Deep Dish Pizza pretty regularly. There were so many places in our area that delivered delicious deep-dish pizza, whenever we wanted it.

Unfortunately, these kinds of places are hard to find in Iowa, and even in Chicago, it was hard to find a healthy alternative like this deep dish SCD pizza crust.

So, I have decided to swap out the ingredients to make this an SCD pizza now that I am eating healthy and when I am craving a deep dish pizza I whip up a gluten-free deep-dish pizza that is also SCD-friendly.

What is SCD?

Diagnosed with Ulcerative Colitis, I sought alternatives to lifelong medications. Despite doctors dismissing diet’s role, I believed in its significance. Discovering the Specific Carbohydrate Diet (SCD), I explored its community, adhering to SCD legal foods and experimenting with recipes to promote healing.

When I stumbled upon the book Breaking the Vicious Cycle: Intestinal Health Through Diet by Elaine Gottschall MS, all of my questions were answered. I was able to find out why the diet was an essential part of regaining my health and why the doctors refused to link the two together.

That was when I looked at food completely differently and began recreating all of my favorite recipes to make them comply with the rules of The Specific Carbohydrate Diet.

SCD Deep Dish Pizza Ingredients

Almond Flour (2 Cups): Almond flour is a gluten-free alternative to traditional wheat flour, making it suitable for those following a grain-free diet like the Specific Carbohydrate Diet (SCD). It adds a nutty flavor and a moist texture to the pizza crust.

Eggs (2): Eggs serve as a binding agent in the crust, contributing to its structure and helping it rise. They also add moisture and richness to the dough.

Parmesan Cheese (1/4 cup): Parmesan cheese brings a savory and salty flavor to the pizza crust. It also provides a touch of umami, enhancing the overall taste of the dish. Parmesan is naturally low in lactose, making it suitable for some individuals with dietary restrictions.

Baking Soda (2 Teaspoons): Baking soda acts as a leavening agent, helping the crust rise and become light and fluffy. It reacts with the acidic ingredients in the recipe, such as the Parmesan cheese.

Colby Jack Cheese (1/4 Cup): Colby Jack cheese adds a creamy and mild flavor to the pizza. It contributes to the gooey, melted cheese layer on top of the crust. While the recipe calls for a small amount, feel free to adjust the quantity based on personal preference.

Olive Oil (1 Teaspoon): Olive oil not only adds richness and flavor to the crust but also helps in achieving a tender texture. It’s a healthier alternative to some other cooking oils and complements the nutty taste of almond flour.

Medium-Sized Buttered Cast Iron Skillet: The cast iron skillet is used to create the deep-dish pizza. It helps achieve a crispy and golden crust. Buttering the skillet adds flavor and prevents sticking.

Enough Olive Oil to Drizzle Crust: Drizzling olive oil over the crust before baking enhances the flavor and contributes to a crispy exterior. It also adds a subtle richness to the finished pizza.

How to Make SCD Deep Dish Pizza Dough

Step 1 Almond Flour Pizza Crust

Start by grabbing a large mixing bowl. Add 2 cups of almond flour, 2 eggs, and 2 teaspoons of baking soda. Mix these ingredients thoroughly to form a cohesive dough.

Now, introduce a burst of flavor and texture by incorporating 1/4 cup of Parmesan cheese, 1/4 cup of Colby Jack cheese, and 1 teaspoon of olive oil into the mixture.

Blend all the ingredients together with care. Ensure that the cheeses and oil are evenly distributed throughout the dough for a delicious and well-balanced crust.

Once everything is mixed, shape the dough into a ball with your hands, working it into a tight ball.

Butter a medium skillet and press dough evenly into the sides and bottom, pressing firmly to remove any air bubbles or cracks in the dough.

Crushed Tomatoes (12-ounce can): The base of the sauce, crushed tomatoes bring a rich, tomato flavor. Opt for a can with no added sugars for adherence to the Specific Carbohydrate Diet (SCD).

Garlic (2 Teaspoons or 1 Teaspoon Fresh Diced Garlic): Garlic adds a robust and aromatic quality to the sauce. You can choose between 2 teaspoons of pre-minced garlic or the fresh option with 1 teaspoon of diced garlic, depending on your preference.

Onion (1/4 of an onion, diced): Diced onion contributes a sweet and savory element to the sauce, enhancing its overall depth of flavor.

Oregano (1/4 Teaspoon): Oregano brings a Mediterranean flair to the sauce with its earthy and slightly bitter taste. It complements the tomato base and other herbs.

Basil (1/4 Teaspoon): Basil infuses a fresh and slightly peppery flavor, brightening up the sauce. It pairs well with tomatoes and adds a touch of sweetness.

Dash of Salt and Pepper: A dash of salt enhances the natural flavors of the ingredients, while pepper adds a subtle kick. Adjust according to your taste preferences.

How to Make SCD Pizza Sauce

Enjoy a delicious SCD-friendly deep-dish pizza with this flavorful sauce that also complements other dishes like Chicken Parmesan and zucchini spaghetti with SCD meatballs.

Heat olive oil in a frying pan over high heat.

Add diced onions and cook until translucent. Introduce garlic and continue cooking for an additional 2 minutes.

Stir in crushed tomatoes, oregano, basil, salt, and pepper. Reduce heat to medium-low and simmer the sauce for about 20 minutes.

This SCD pizza crust is a deep dish gluten-free and low carb version of the popular Chicago-style pizza.

Ingredients

SCD Gluten Free Deep Dish Pizza Crust

  • 2 Cups of Almond Flour
  • 2 Eggs
  • 1/4 cup Parmesan Cheese
  • 2 Teaspoons of Baking Soda
  • 1/4 Cup of Colby Jack
  • 1 Teaspoon of Olive Oil

SCD Gluten Free Deep Dish Pizza Sauce

  • 12 ounce can of Crushed Tomatoes
  • 2 Teaspoons Garlic or 1 Teaspoon Fresh Diced Garlic
  • 1/4 of an onion, diced
  • 1/4 Teaspoon Oregano
  • 1/4 Teaspoon of Basil
  • A Dash of Salt and Pepper
  • 1 Teaspoon of Olive Oil

Pizza Toppings

  • Provolone Cheese
  • Pepperoni or Veggies to Top the Pizza

Instructions

    In a Large Mixing Bowl add the 2 Cups of Almond Flour and the 2 Eggs, 2 Teaspoons of Baking Soda, and mix well.

    Then add in the 1/4 cup Parmesan Cheese, 1/4 Cup of Colby Jack, and 1 Teaspoon of Olive Oil. Mix everything until well combined.

    Once everything is mixed, shape the dough into a ball with your hands, working it into a tight ball.

    Butter a medium skillet and press dough evenly into the sides and bottom, pressing firmly to remove any air bubbles or cracks in the dough.

    For the Sauce: Add Olive oil to a frying pan and turn on high heat. Add Onions and let cook until they become translucent. Add Garlic and heat for an additional 2 minutes.

    Add the rest of the ingredients and stir. Cook on medium to low heat for about 20 minutes.

Notes

If you are making this recipe with the intention of eating half today and saving half for tomorrow, be sure to grease the pan again the next time you want to heat it up. Check the pizza frequently to avoid overcooking when reheating.

Made it and the flavor was there but the kids didn't like the texture. It fell apart too easily for us. But overall a really good recipe.

Sorry to hear the kids weren't crazy about the texture! IF your crust is falling apart maybe try adding more olive oil to soften the flour and make it more workable. Thanks for stopping by and leaving a comment!
