How to Make Biscuits and Gravy

Growing up in New Jersey, I had never even heard of Biscuits and Gravy and I definitely didn’t know how to make it.

After I met my husband and we moved to Illinois, I seen biscuits and gravy served at nearly every restaurant.

I’m not saying this famous breakfast wasn’t available in New Jersey but it definitely wasn’t as common and I certainly had never heard of it before moving away.

How to Make Biscuits and Gravy

After visiting many local restaurants in the Chicago area I tried biscuits and gravy for the first time and loved it.

Like with any new food I fall in love with, after trying it, my wheels began turning and I couldn’t help but wonder how it was made.

Lucky for me, my mother in law not only knew how to make it but was happy to share her tips and tricks with me.

Over the years and after making this recipe hundreds of times, I have perfected my very own version and it’s too good not to share!

What you’ll need:

1 lb Pork Sausage

1 Cup of Corn Starch

6 Cups of Milk (divided)

1/2 Cup of All Purpose Flour

About 16 biscuits

How to make biscuits & gravy

Brown the Pork Sausage in a frying pan on high. Once it begins to brown and sizzle, turn down heat to medium.

You don’t want to overheat because the grease will begin to dissipate and you actually want this grease to hang around as it provides the flavor for the gravy.

In a bowl mix the cornstarch, milk, and Flour until well combined. Add more milk if needed to blend the ingredients, it may thicken fast and this will make it really hard to mix.

Add the gravy mix to a completely browned sausage in the frying pan and mix together.

Keep on medium heat and continue to add a cup of milk at a time and mixing together.

Let heat for a few more minutes and then add more milk.

Continue this step until all of the milk is added or until you reach the consistency and amount of gravy you desire.

Keep in mind that the gravy will thicken as it stands.

Pour the sausage and gravy over the biscuits and serve.

My family loves to eat this for leftovers the next day for breakfast, lunch, and dinner. I have found that when storing this meal and serving it again as leftovers, it may help to add a little more milk before reheating.

I made these this morning and I liked the recipe because it was simple but I’m still adding liquid trying to get it the right consistency because immediately it seemed too chunky and thick and clumpy. I knew it seemed like a lot of corn starch. Also adding lots of salt and pepper because it’s bland. Help! Did I do something wrong?

I am not sure what went wrong, sorry to hear it didn't work out for you. The amount of cornstarch works perfectly to avoid adding in too much flour which can lead to a bland taste. I always add salt and pepper to biscuits and gravy, it goes together so well. This is my go-to recipe and has yet to fail me. I wish you better luck next time!

You must be in southern Illinois? I am in Iowa (NE) and no one can make this to save their lives. I grew up down south, where the possibly best biscuits and gravy are made. My Grandmother made the best and it is one of my favorite mealls. You make the biscuits right!
