Guilt Free Peanut Butter and Jelly Sandwich Cookies

These peanut butter and jelly sandwich cookies are the perfect indulgence because they are both delicious and guilt-free. Even if you don’t follow a diet like the Specific Carbohydrate Diet, you have to appreciate the fact that these cookies are made without added sugar and are gluten-free.

With all of the popular diets these days requiring that we cut sugar, gluten, or any number of ingredients out of our diet, it can be really hard to find a guilt-free dessert but I think these cookies are perfect. They have a creamy filling with a kick of sweetness and that chewy cookie texture that I always seem to be craving.

The last thing you need when trying to eat healthy is a sudden craving to hit. Especially one with textures and flavors that are hard to replicate on a specific diet like SCD, Paleo, or Keto (if you omit the honey). It’s hard to eat a piece of fruit instead or to put the sudden urge to eat something unhealthy out of your mind. You know the kind of craving I am talking about, it’s the kind of craving that is so specific nothing else will be good enough until you get exactly what your taste buds desire, like a Harold and Kumar type of craving.

The only thing that works to fight those types of cravings for a lot of us is to keep anything unhealthy out of the house. Making sure that you don’t even stock unhealthy ingredients, leaving your entire home a safe zone for your healthy lifestyle. For some of us that means that we don’t get to satisfy our craving but for someone like me, I just get creative. I start running through all of my available ingredients and decide on exactly what I am craving. This craving called for a chewy, sweet, and creamy dessert that I wouldn’t regret.

After creating a wonderful new recipe that hits the spot, I usually feel like I have accomplished something pretty awesome.  Itis pretty rewarding being able to create a recipe out of random ingredients that I have already around my house, especially when those ingredients are part of the Specific Carbohydrate Diet. That is especially true when the recipe is for something healthy like these Peanut Butter and Jelly Sandwich Cookies.

When I created this recipe I was trying to make some kind of cookie that I could eat in between meals that would actually satisfy my cravings and keep me from overeating. Without sounding like I am completely full of myself, I must say, I nailed it.

These peanut butter and jelly sandwich cookies are the perfect snacks to enjoy in between meals or as a dessert without all of the guilt. They are dense enough to feel like you have eaten a hearty portion and they are sweet enough to curb my cravings but my favorite part is that I only need to eat one to feel full.

I don’t know if it is the addition of coconut flour or the sunbutter but something makes these peanut butter and jelly cookies really satisfying.

Another thing I really like about this recipe and it is true about almost all of my recipes, you just dump some ingredients into a mixer, then bake them, so simple.

No need to sift or zest anything, no need to google what sifting and zesting actually mean, just a simple to make, guilt-free recipe, the way it should be.

Once the cookies are baked, just spread your favorite jelly on top.

Then grab another cookie and spread your favorite peanut butter on top of that one. You may have already guessed the next step, slap those bad boys together and you now have a Peanut Butter and Jelly Sandwich Cookie.

Peanut Butter and Jelly Sandwich Cookies

Ingredients

  • 16 ounces of Sunbutter
  • 1 Stick of Butter
  • 3/4 Cup of Honey
  • 2 Tablespoons of Vanilla Extract
  • 3 Eggs
  • 1 1/4 Cup of Almond Flour
  • 5 Tablespoons of Cinnamon
  • 1/2 Teaspoon of Baking Soda
  • 1/3 Cup if Coconut Flour
  • Dash of Salt
  • 1/4 Teaspoon of Ginger
  • 1/2 Teaspoon of Nutmeg
  • ----------------
  • Jelly for spreading
  • Peanut Butter for spreading

Instructions

  1. Mix all of the ingredients in a mixer (all but the peanut butter and jelly) and once it is completely mixed form cookies and place on baking sheet. Bake in preheated oven 350 degrees for about 8 minutes.
  2. Let cookies cool in refrigerator for a few hours before spreading peanut butter and jelly.
  3. Once you place the two halves together, enjoy your peanut butter and jelly sandwich cookies.
