When planning a picnic or get together with my family it is always a good idea to prepare the meal long before we head out the door. My daughter has a habit of dragging her feet at the last minute and being late is never an option for my husband and I so a make ahead potato salad is the perfect dish to bring.

I started off by heading to Walmart to pick up the ingredients to make my potato salad as well as picked up some of our favorite desserts, EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream and EDY’S® SLOW CHURNED® Vanilla Light Ice Cream.

After I picked up all of my supplies for our picnic, I headed home to make the perfect picnic potato salad.

Perfect Potato Salad Tutorial

To make this potato salad you will need 5 potatoes, 5 eggs, 2 tablespoons of mustard, 1/4 cup of relish, 1 teaspoon pepper, 1 tablespoon of salt, 1 cup of mayonnaise, and one small onion.

If you are not an onion or relish person just omit those ingredients, this recipe is pretty easy to adjust and leaving these items out will not change the consistency, they only enhance the flavor.

Peel the potatoes and boil for about 20 minutes. You want them to become tender but not so soft that they become mashed potatoes.

Potato Salad Recipe with eggs

Boil water and add eggs once there are bubbles formed inside the pot. Let cook for about 5 minutes and then sit in the hot water for about 10 minutes. Drain the water, add cold water and some ice cubes, let eggs sit inside cold water for a few minutes.

Let the potatoes cool. Peel eggs and dice potatoes. Add to bowl along with the rest of the ingredients. Mix well.

Once all of the ingredients are combined, allow the potato salad to cool in refrigerator for a couple of hours and serve chilled or at room temperature depending on your preference.

I prefer my potato salad right out of the refrigerator, chilled and delicious! This is perfect for those hot days in the Summer and the best dessert to follow up this potato salad with is a creamy bowl of EDY’S Ice Cream.

This is basically the recipe I use, except I use Miracle Whip instead of mayo. Potato salad is one of my favorite things.
