This gluten free chicken parmesan recipe is an easy way to make a gluten-free juicy chicken meal for the whole family. Plus, it's SCD-legal!

Ingredients

  • 2 Lbs Boneless Skinless Chicken Breast
  • 2 Eggs
  • 2-3 Teaspoons of Olive Oil to Grease Pan
  • 1/2 Cup of Almond Flour
  • 1/4 Cup of Coconut Flour
  • 1 Teaspoon of Oregano
  • 1 Teaspoon of Basil
  • 3 Tablespoons of Garlic Powder
  • 2 Teaspoons of Onion Powder
  • 3 Cups of Tomato Sauce
  • 2 Cups of shredded provolone cheese

Instructions

  1. Start with boneless skinless chicken breast, sliced and trimmed of fat, creating a thin chicken cutlet.
  2. Once your chicken is prepared, beat two eggs in a bowl. Then in another bowl add all of the chicken Parmesan seasonings and flour, stirring together until well combined.
  3. Add a drizzle of olive oil to your frying pan and begin heating the pan on a high setting.
  4. Dip the chicken cutlets into the egg and then dredge the chicken in the bowl of seasoning.
  5. Preheat your oven to 450 and then place each coated chicken breast into the heated frying pan, adding a drizzle of olive oil on top.
  6. Cover the pan and let cook for about 5 minutes on each side or until the edges are golden brown, covering after each flip. The stove top cooking time of your chicken Parmesan will vary depending on the thickness of your chicken breast.
  7. When chicken is fully cooked inside and crispy on the outside, remove from the stove top. Place the chicken inside of a lasagna pan or rectangular baking dish.
  8. If you pour a little sauce onto the bottom of the pan before adding the chicken, it will be easier to clean later with fewer chicken pieces sticking to it.
  9. After adding the chicken to the pan, pour the rest of your tomato sauce on top and sprinkle with cheese.
  10. Bake for another 5-7 minutes or until your cheese on top has melted.
