SCD Lemon Cookies Gluten & Sugar Free

Everyone has a craving occasionally and lately mine has been lemon cookies. I remember eating the store-brand cookies when I was kid, they were filled with lemon cream and sandwiched between two crispy cookies that were the best at absorbing milk.

As I moved around through life, everywhere I ended up had a store-brand lemon cookie that tasted just like the ones I had when I was a kid. So, every now and then when I get that craving I just run to the store and pick up a package of these for usually very cheap.

Well since I have been on the Specific Carbohydrate diet, also known as SCD ( you can find more information about this diet, here.) I have been craving these cookies and I know there is no easy trip to the store that will end with me satisfying my craving.

As with all of my favorite recipes, I have decided to recreate this tasty treat while leaving out all of the bad stuff. Even if you are not following SCD, you will love these cookies and have a hard time believing they are Gluten & Sugar-Free!

SCD Lemon Cookies

What you’ll need for the SCD Lemon Cookies:

2 Cups of Almond Flour

3 Tablespoons of Butter

1 Tablespoon Vanilla Extract

1/4 Cup of Lemon Juice

1/4 Cup of Honey

1 Teaspoon Lemon Zest

1/2 Cup of Unsweetened Apple Sauce

Preheat oven to 350 degrees

Mix all ingredients in a mixer until a dough forms. Scoop out 1 Tablespoon at a time to form cookies on a parchment paper-lined baking sheet.

Bake for about 12-15 minutes

SCD Lemon Cookies

What you will need for the Icing:

1 Tablespoon of Lemon Juice

2 Tablespoons of Honey

2 Tablespoons of Coconut Oil

Beat all ingredients well and wait until cookies are cooled before adding icing.

Put cookies in the refrigerator to cool completely. Mine were perfect after 3 hours and I leave them in the fridge until they are all gone!

  • 1/2 Teaspoon Baking Soda
  • 1 Tablespoon Vanilla Extract
  • 1/4 Cup of Lemon Juice
  • 1/4 Cup of Honey
  • 1 Teaspoon Lemon Zest
  • 1/2 Cup of Unsweetened Apple Sauce
  • What you will need for the Icing:
  • 2 Tablespoons of Lemon Juice
  • 2 Tablespoon of Honey
  • 2 Tablespoons of Coconut Oil

Instructions

    Preheat oven to 350 degrees
    Mix all ingredients in a mixer until a dough forms. Scoop out 1 Tablespoon at a time to form cookies on a parchment paper-lined baking sheet.
    Bake for about 12-15 minutes
    Cool before Icing and refrigerate after icing for at least 3 hours.

I made these and they were delicious! Addicting, actually. When I finished one, I just wanted more. I made my applesauce fresh and it was very thick. I used a scoop to make balls. The batter was loose. Next time I might add a little more almond flour.

There's something definitely missing from this recipe. It was impossible to form a tablespoon cookie from a liquid mixture. There was no dough. It was all liquid. A total waste of ingredients and time.
