Easy Southern Potato Salad Recipe

Nothing brings me back to the Summers I spent in Virginia quite like this Southern Potato Salad Recipe.

While I claim the streets of New Jersey and consider it my home state, the truth is that I moved all around when I was a kid. My parents were anything but stable, they moved from home to home and even state to state at times.

While I did spend a good deal of time in the garden state I also put in some time, mostly during Summers, with my family in the beautiful state of Virginia where I enjoyed the delicious foods that only the South has to offer.

I had some great times there and whether I like to admit it or not, Virginia and the family who reside there were a big part of shaping the person that I am today.

I spent a big chunk of my life there and almost all of my memories from that time are filled with happiness thanks to my grandfather who was always showing us a good time.

I remember visiting the beaches of Chincoteague island with him, this island is most known for the pony swim that takes place there annually. This is where The Chincoteague Pony originated, they are a beautiful breed of pony that is developed there and still to this day lives in feral conditions in that area.

As a kid, I don’t think I quite had an appreciation for wild ponies living among us as I do now that I live far away from there. It’s pretty amazing to think that this kind of nature still exists in the world and I love thinking about those days spent outdoors, literally barefoot for most of it, eating delicious southern food.

One thing that always brings me back to those days spent enjoying the South, is this delicious Southern Potato Salad Recipe.

This is such an easy recipe to recreate and the perfect potato salad to bring to any picnic. The ingredients are fairly simple considering you may already have most of them in your cabinets already.

This is the kind of potato salad that can be whipped up in no time and enjoyed the same day.

The first step is to peel the potatoes and boil them for about 15-20 minutes. You want them to become tender but not so soft that they become mashed potatoes.

Boil water and add eggs once there are bubbles formed inside the pot. Let cook for about 5 minutes and then sit in the hot water for about 10 minutes. Drain the water, add cold water and some ice cubes, let eggs sit inside cold water for a few minutes.

Let the potatoes cool. Peel eggs and dice potatoes. Add to bowl along with the rest of the ingredients. Mix well.

Add a garnish on top of chives and Italian season for an extra burst of flavor.

  • 3 pounds russet potatoes peeled and cubed (About 7-8 medium size potatoes)
  • 2 tsp kosher salt
  • 4 hard-boiled eggs peeled and chopped
  • 1/2 cup sweet yellow onion finely minced or grated
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/ cup of diced pickles
  • 1/2 teaspoon of garlic powder
  • 1/4 tsp ground black pepper
  • dash of paprika for garnish
  • sprinkle chives on top
