I absolutely love using my crockpot and although I am still technically cooking dinner, it always feels like I have the night off. When following a keto or low carb diet, it can be hard to find quick and easy keto recipes but lucky for you, you have stumbled upon this easy crockpot dump meal.
I am all about simplifying the process and making all of my favorite recipes simple to make without losing out on the flavor. This keto crockpot is no exception, the whole family loves it and it is so easy to make, it really is like taking the night off from cooking.
Products You Will Need to Make this Chicken and Rice Keto Crockpot Meal
I use a potato smasher to break up the chicken and of course, a crockpot is required. You can use any crockpot for this meal that will fit all of the ingredients but I prefer this crockpot because it has a built-in stirring system and it allows me to program the cooking times to best fit my schedule.
Ingredients Needed for this Keto Chicken and Rice
- Chicken– I like to use boneless, skinless chicken breasts whenever possible, this cut is my favorite to use for all of my keto crockpot recipes. It is easy to work with and always comes great.
- Chicken Broth– The chicken broth can be homemade or boxed, just be careful to look at the ingredient label when using the store-bought broth for keto slow cooker recipes. You would be surprised how many brands contain not-so-keto-friendly ingredients.
- Ranch Seasoning – Once again, this can be homemade or store-bought but be sure to check out the label. There are a few good brands out there that are keto-friendly but it is always best to be sure before making a purchase.
- Coconut Flour– I always have some on hand and use it in a lot of my low-carb slow cooker meals because it seems to thicken sauces and soups while lending a subtle flavor to the recipe.
- Heavy Cream– If you have been following a keto diet for a while, you probably always have this on hand, it’s perfect for making creamy keto soups, and it makes coffee worth drinking in my opinion.
- Diced Tomatoes with Green Chilies– Have you seen the giant cans of Rotel at the store? I love being able to buy this product in bulk, I use it in so many keto recipes that I always buy a case when grocery shopping.
- Diced Jalapenos– You can buy this in a jar already diced or chop up a fresh jalapeno, it’s up to you!
- Steamed Cauliflower Rice– You can buy cauliflower rice in steamable bags at the grocery store, just pop them into the microwave while getting the crockpot out and it will be ready to add-in to this keto dump meal.
- Cheese– Cheddar, Mozzarella, and Cream Cheese come together to create a delicious creamy crockpot meal. This is another ingredient I always have on hand and I love it so much that I sprinkle some on top when this keto crockpot meal is finished cooking.
Topping Ideas?
Sour Cream- This keto crockpot meal can be really hot due to the long cooking time and the liquid amount so to speed up the cool down process, you can add in a spoonful of sour cream. It not only cools this meal down but it adds a nice creamy flavor that you are sure to love.
Fresh Cheese- Even though this recipe has quite a bit of cheese in it, you can never have too much, can you? Sprinkle some shredded cheddar on top when this keto slow cooker meal is finished cooking, for an extra burst of flavor.
Jalapenos- If you want your keto chicken and rice to be a bit spicier, add fresh jalapeno peppers to the finished bowl and enjoy.
How to Make Keto Chicken and Rice in the Crockpot
This recipe is really simple to throw together. All you will need to do is get your crockpot out, turn it on and add in these ingredients.
You will start this keto chicken and rice recipe by adding 2 pounds of chicken breast to the bottom of the crockpot. Next, you will Pour in 64 ounces of chicken broth.
Then, you will need to add in one packet of Ranch Seasoning along with 1 Tablespoon of Coconut Flour.
Mix those two ingredients together and then pour in 1 Cup of Heavy Cream.
Open up a can and mix in 24 ounces of Diced Tomatoes with Green Chilies as well as the 2/3 a Cup of Diced Jalapeno. Pop that 24 ounces of steamable cauliflower rice into the microwave for a few minutes and then add it to the crockpot.
The last addition to this easy keto crockpot dump meal is cheese. Mix in 2 Cups of Cheddar Cheese, 1 Cup of Mozzarella, and 8 Ounces of Cream Cheese, then stir all of the ingredients together.
If the cream cheese is lumpy, you can use a whisk to mix it in, wait until the meal is done cooking to make this easier as it becomes melty, the cream cheese liquefies with less effort.
Set your crockpot on high and let it cook for about 6 hours before serving.
How to Shred the Chicken
When this easy low carb slow cooker meal is finished cooking, use a potato masher or a large fork to press down on the chicken breast and pull it apart. If you would rather have chunks of chicken rather than shredded chicken in your recipe, just separate each piece slightly when mixing everything together.

@Marysa, I put in half the amount of chicken broth and the ingredients reached the top of my crock pot. Not sure if the recipient is off or you have a giant crock pot. Fingers crossed this turns out ok.
