Place the chicken breasts at the bottom of the crockpot, and add diced garlic and butter directly.

Add diced tomatoes, jalapenos, cream cheese, Parmesan cheese, and heavy whipping cream. Sprinkle in onion powder, garlic powder, cayenne pepper, salt, and pepper.

Recipe Update

After making this keto dinner hundreds of times and reading feedback from those following a low-carb lifestyle, I have updated this recipe to make it simple while delivering the same delicious flavors you have come to expect from this keto recipe.

If you want to create more work for yourself and increase the meal prep time, feel free to follow the old recipe that is not a keto crockpot dump meal but keep in mind that these steps are unnecessary as this recipe is perfect as a slow cooker dump meal for a low carb diet.

  1. Add 3-4 large chicken breasts to the bottom of a crockpot on high. In a frying pan, saute garlic with a tablespoon of butter until soft, about 3-5 minutes.
  2. Add diced tomato and jalapenos, then add in the cream cheese, parmesan, and heavy cream. Cook for a couple of minutes to allow the cream to thicken.
  3. Add in the seasonings and stir, allow to cook for a couple of minutes until the sauce thickens.
    While that is cooking, boil broccoli until soft, this should take about 10-12 minutes.
  4. Drain broccoli and add to the crockpot.
  5. Add the sauce to the crockpot and cook on high for 3-4 hours. Or Cook on low for about 6 hours.
  6. Stir within the last hour to break up the chicken to a more shredded texture.

Variations on this Recipe

For a spicy keto dinner, increase the amount of jalapenos that this recipe calls for or increase the cayenne pepper.

You can also use fresh broccoli instead of frozen and you can steam the broccoli instead of boiling it if you prefer. Another time-saving tip for broccoli is to purchase steamable bags that allow you to just pop them into the microwave to soften them before adding to the crockpot.

Storage Tips

As with all of my favorite low-carb chicken breast crock pot recipes, I make a lot of food at once, so sometimes there are leftovers. Store any remaining portions in airtight containers in the refrigerator for up to 3 days or freeze for future keto-friendly cravings.
