This easy recipe contains over 120 grams of protein when counting all of the ingredients including cream cheese, cauliflower rice, garlic powder, cheddar cheese, butter, and the tender chicken from John Soules.
When following a keto diet, it can be hard to find low-carb dinners that the whole family can enjoy but this is the perfect meal for even the pickiest of eaters. Plus the rotisserie seasoned chicken makes this meal a great source of protein

When serving my family this Cheesy Chicken and Rice Skillet I like to pair it with a salad. Iceberg lettuce, tomato, olives, and cheese is my favorite combo. I top this salad with my favorite homemade easy vinaigrette dressing.
Sometimes I serve this meal with brussels sprouts, zucchini noodles marinated in lemon juice, or butternut squash in a creamy sauce.

To make this Cheesy Chicken and Rice you will need:
- John Soules Rotisserie Seasoned Chicken Breast
- Cauliflower Rice
- Heavy Cream
- Cream Cheese
- Garlic Powder
- salt
- butter
- small onion
- cheddar cheese
How to Make this High Protein Low Carb Dinner Idea
To make this cheesy chicken and rice, you will need a good skillet. I prefer the kind with rivets and a copper bottom, they seem to work best for me but you can use any frying pan you have. Start by adding butter and cream cheese to a pan heated on high.
While the pan is heating up, steam the cauliflower rice in the microwave and set it aside.
Use a spatula to break up the cream cheese and press it into the pan, making sure it is evenly being melted along with the butter. Mix the two together as they melt inside the pan. It may take about three minutes to fully melt the two together.
Be sure to stir and press the back of the spatula down on the cream cheese, this helps it to melt fast.
The next step is to add heavy cream, garlic, and salt. Mix everything together and then add a diced onion. Cook alone for about a minute and then add in the cheddar cheese.
Cook for a minute and then add the steamed cauliflower rice. Stir everything together, making sure it is well combined.
Once you have thoroughly stirred the ingredients together, it’s time to add in the chicken. Cook for another five minutes before serving.

You can swap out some of these ingredients to fit your tastes, timeframe, or your budget. Swap out the cheddar for parmesan cheese if you prefer, add in some onion powder or black pepper for a bold flavor or add a scoop of sour cream for a creamier dish.
