This is a family favorite meal in my house and each of us has a different reason to love it. The zucchini noodles and the creamy sauce come together to create a delicious keto chicken alfredo recipe.

When I say this dinner is simple, I mean it. No large mixing bowl or preheated oven is required to make this recipe! In order to prepare this Chicken Zucchini Alfredo Skillet, you will need the following ingredients.

- 1 and 1/2 lbs of John Soules Foods Oven Roasted Chicken Breast
- 12-ounce bag of Zucchini Spirals
- 1 and a 1/2 Tablespoons of Butter
- 1 and a 1/2 Tablespoons of Garlic Powder
- 1 Cup of Heavy Cream
- 4 Ounces of Cream Cheese
- 1/2 Cup of Parmesan
- 1 Teaspoon of Black Pepper (Separated)
- 2 Teaspoons of Salt (Separated)
How to Make this Low Carb Chicken Alfredo Recipe
This meal comes together pretty easily in just one large skillet. No need to mess up the whole kitchen and spend the rest of your evening washing dishes!
The first step is to put the zucchini in the microwave to be steamed. This usually takes about 11-12 minutes with the brand I use most often but feel free to boil or steam yours on the stove.
Obviously, this method will require more dishes, so if you want this meal to be as simple as possible, I would buy the steamable version in the freezer aisle.
While the zucchini is cooking you can begin making the creamy alfredo sauce.
Do this by first adding butter to a skillet and turning the heat to high.
Add in garlic powder, half of the salt, and half of the pepper, and cook for about two minutes. Stir the ingredients together with the melted butter.
Add in the parmesan cheese, cream cheese, and heavy whipping cream, mixing each ingredient together upon adding it to the pan.
The cream cheese will require a little finesse. This can be done by using a cooking spoon or spatula to press the cream cheese against the pan and break it up as it begins to cook.
If you find that the ingredients are cooking too fast, switch to medium heat.
Allow those ingredients to cook together for about 2 minutes before adding in the chicken.
Mix everything together and while stirring, wait for the keto alfredo chicken bake to heat up an additional 4 minutes, and then add in the prepared zucchini.
Add the remaining salt and pepper to the skillet then stir the cream sauce before serving. Store any leftovers in an airtight container.
Variations of this Chicken Alfredo Skillet
If you want to use fresh zucchini from your garden or otherwise, feel free! This recipe is delicious with both the quick freezer version and fresh ingredients. I like to switch it up, especially when my garden is producing zucchini!
No need to spiralize the zucchini, you can use chopped zucchini in this recipe for a deliciously chunky creation that the whole family will enjoy.
The homemade alfredo sauce also pairs well with chicken thighs, boneless skinless chicken breasts, leftover chicken, and rotisserie chicken.
Just be sure to adjust cooking times when using raw chicken. You could even make this creamy alfredo sauce with half of the cooked chicken by cutting the exact measurements in half.
You may want to adjust the heat level to medium high heat when using fewer ingredients.
This recipe uses a bed of zoodles but you can add in a variety of low cab veggies like steamed broccoli or use a different kind of low carb noodles if it fits better into your keto diet.
You can use shirataki noodles, also known as miracle noodles if you prefer. Just follow the recipe card to make sure that you make the alfredo sauce keto friendly.
If you like your meals a bit spicier, try adding in a couple of tablespoons of white pepper, cayenne pepper, red pepper flakes, or hot sauce, for a delicious flavor enhancement.
