Low Carb Chicken Zucchini Alfredo Skillet

This is a sponsored post written by me on behalf of John Soules Foods for IZEA Worldwide. All opinions are 100% mine.

When it comes to making a quick and easy meal, it doesn’t get faster or more delicious than this Low Carb Chicken Zucchini Alfredo Skillet. This is a family favorite meal in my house and each of us has a different reason to love it.

Why We Love This Quick Dinner

My favorite thing about this meal is that it can be made in under fifteen minutes! My daughter who is the resident dishwasher loves that it can be made in only one pan. My husband who is the most opinionated foodie had nothing but great things to say about it. So this Chicken Zucchini Alfredo Skillet is a favorite in my house.

There are many other reasons I love this meal besides the simplicity of it. I use John Soules Foods Oven Roasted Chicken Breast which is fully cooked, gluten-free and doesn’t contain artificial ingredients.

Using fully cooked chicken to create recipes that the whole family loves has been a huge time saver. I love being able to spend the day with my family and not worry about when the fun has to end because I know I have to get dinner on the table.

Everyone has fifteen minutes to spare!

Plus, this is a high-protein meal that everyone will love, you can’t go wrong with this quick dinner option!

How to Make Chicken Zucchini Alfredo Skillet

This meal comes together pretty easily in just one skillet. No need to mess up the whole kitchen and spend the rest of your evening washing dishes!

The first step is to put the zucchini in the microwave to be steamed. This usually takes about 11-12 minutes with the brand I use most often but feel free to boil or steam yours on the stove. Obviously, this method will require more dishes, so if you want this meal to be as simple as possible, I would buy the steamable version in the freezer aisle.

While the zucchini is cooking, add butter to a skillet and turn the heat to high. Add in garlic, half of the salt, and half of the pepper, and cook for about two minutes. As the butter melts, stir the ingredients together.

Add in the parmesan, cream cheese, and heavy cream, mixing each ingredient together upon adding it to the pan. The cream cheese will require a little finesse. This can be done by using a cooking spoon or spatula to press the cream cheese against the pan and break it up as it begins to cook.

Allow those ingredients to cook together for about 2 minutes before adding in the chicken.

Mix everything together and while stirring, allow to cook for an additional 4 minutes and then add in the prepared zucchini.

Add the remaining salt and pepper to the skillet and stir before serving.

Variations of this Chicken Alfredo Skillet

If you want to use fresh zucchini from your garden or otherwise, feel free! This recipe is delicious with both the quick freezer version and fresh ingredients. I like to switch it up, especially when my garden is producing zucchini!

No need to spiralize the zucchini, you can use chopped zucchini in this recipe for a deliciously chunky creation that the whole family will enjoy.

If you like your meals a bit more spicy, try adding in a couple of tablespoons of cayenne pepper for a delicious flavor enhancement.
