If you love the bold flavors of fajitas but don’t want to spoil your diet, this low carb option is perfect. It’s so easy, cheesy, and sure to hit the spot!
While I am not on the Specific Carbohydrate Diet or Keto at this time, I do like to eat low carb when I can. I have found that my body reacts badly to a lot of carbs, especially items containing a lot of flour, like tortillas. I usually bloat up pretty quickly after eating them and at times struggle to get back to normal. Instead of giving up the foods that I enjoy that usually go hand in hand with carbs, I have made a low carb option so I can enjoy my favorite foods without all of the bloating and regret.
A good casserole dish comes in handy for these type of recipes, thankfully my husband bought me a ton of them in every size and shape. He’s the best. We were passing through a housewares section on the way to pick up a Halloween costume for my daughter and I mentioned how cute the blue casserole dish on display was. He insisted that I buy it and of course my first reaction was, no freaking way, they want too much money for it. The next thing I know, there are like 6 different casserole dishes in every shape you can imagine under the Christmas tree. He couldn’t find that exact one that I initially admired so he bought me a variety to make sure I got one that I would like. This guy, right? ♥
You can see why I have been posting so many casserole recipes lately, like this Taco Casserole and my personal favorite, Easy Cheesy Spaghetti Squash Casserole. They really come in handy when trying to eat low carb or following a diet like Keto or SCD.
I like to make this Easy Cheesy Low Carb Fajitas Recipe on Monday and then for the next few days, I have leftovers for lunch without all of the work of preparing a whole meal. Not that this is a difficult recipe to make but who wants to cut up all of the veggies, meat, and cook each day just for lunch?
I am just too busy in the middle of the day to prepare a healthy dish and would usually grab something less desirable just to get through lunch which is never a good idea. Planning ahead is the best way for me to be successful in eating low carb and staying on track with my healthy eating plan.
This way I only have to do all of that slicing and dicing one time and I can enjoy a delicious low carb meal for days, without doing all the work. Whenever I take the night off from cooking and we head to a Mexican restaurant I usually order the fajitas, sans tortilla. Why add all of those carbs into such a perfect dish? I could eat them this way every time and I never feel like I am missing something.
These cheesy low carb fajitas reheat so easily and taste even better the second or even third day in my opinion. I don’t know if it is because the flavors get a chance to blend overnight or if it more enjoyable when you don’t have to do the prep work. Either way this Low Carb Fajita Recipe is a keeper, and I will be enjoying this one again and again.
This also makes a great dinner for the whole family, it is a perfect way to get a colorful and healthy meal on the table. I like to serve it with a side of pico de gallo and salsa verde.

I've been slowing cutting my carbs each day hoping to get down to the desired count of 25g. These fajitas will make the low-carb life more bearable. I could probably eat these three times a week and not burn out.

How darn sweet to buy a variety.... wow! I’ve never put cumin in a fajita or provolone cheese for that matter but I can’t wait to try your recipe! It’s making me hungry just looking at your pictures!!😉 I assume I could do this recipe with steak or chicken? I’ll see which I have in the freezer!
