Ingredients Needed to Make Low Carb Taco Casserole Recipe

With a quick trip to the grocery store, you can get everything you need to create an easy keto taco casserole in a baking dish. 

Ground Meat- I usually use a venison lean ground beef mixture for my low carb casseroles but you can use ground turkey or your preferred taco meat mixture. 

Taco Seasoning- To save time, I usually use this keto taco seasoning but you can make your own homemade taco seasoning if you are feeling up to it. 

Tomatoes- A small tomato contains about 2.5 grams of net carbs. If you are trying to cut back on your carb count, you may want to use less to make this low carb taco casserole keto friendly. 

Onions- I add a couple of tablespoons of diced onion for some extra flavor but when making keto recipes be sure to use sparingly.

Shredded Lettuce- A sprinkle of lettuce on top is a great way to add more volume to the casserole dish without adding too many extra carbs for those on the keto diet.

Sour Cream- Add a dollop of sour cream to this keto taco pie just before serving.

Cheddar Cheese- I sprinkle the shredded cheese on top of the meat so it melts together during the cooking process. 

Tortillas- I make my own keto tortilla chips by spraying low carb tortillas with an olive oil cooking spray before baking in an air fryer set to 400 degrees for about 5-7 minutes. 

You can use these zero net carb tortillas to keep it keto.

Heavy Cream- I like to add a little heavy cream to the cheese before baking, this helps the cheese to spread and can mimic adding lots of cheese without having to pile it on. 

Jalapenos- Slice up some fresh jalapenos from your garden or use pre-sliced ones from the grocery store.

This is my preferred pepper because it adds so much flavor to casserole recipes although I have been known to add in some green chiles from time to time.

I add this to the raw meat when cooking in a frying pan, the medium-high heat softens up fresh peppers quickly.

Variations on this Family Favorite Recipe

Whether you are following a strict keto diet or just want to customize this great recipe to make the perfect meal for your family, there are lots of ways to customize this recipe. 

Use a Mexican cheese blend, Colby jack, mozzarella, or Monterey jack, or even add a layer of cream cheese or cheese egg mixture if you want a creamy casserole. 

Add Beans! If you aren’t worried about your carb count feel free to add in a layer of refried beans to make this keto casserole resemble a deconstructed taco. 

If you want a bit more spice, add green chilis, red pepper flakes, chili powder, taco sauce, or your favorite hot sauce.

Add more veggies like green onions, black olives, or bell pepper to resemble a taco bowl with all of your favorite toppings.

Use chicken instead of ground meat and add in some ranch seasoning and bacon for a simple copycat of chicken bacon ranch casserole.

Next time, try adding your own flavors instead of using a premade taco seasoning.

When I make my own taco seasoning I use a combination of garlic powder, onion powder, paprika, cumin, chili powder, and red pepper. 

Feeding a crowd?

Double this recipe and use twice the amount of taco shells or low-carb tortillas to fill the bottom of a large casserole dish.

Pile even more ingredients on top to feed more people.

Make your low carb taco casserole with cauliflower rice or create an enchilada sauce with a tomato paste base or resemble a low carb taco lasagna.

How to Make Low Carb Taco Casserole Recipe 

Start by spraying tortillas with cooking spray and crisping them in an air fryer set to 400 degrees for about 5-7 minutes.

You can make these ahead of time if you prefer but be sure to wrap them tightly in plastic wrap or an airtight container so they are still fresh at dinner time.

In a large skillet, brown the ground meat just like you would for any keto cheeseburger casserole recipe.

It would be nice if we could skip this step and save a dish but unfortunately, the complete recipe calls for the browning of the meat. 

Crumble the tortillas and place them at the bottom of the casserole dish, I usually keep them in chip shapes but you can do this part however you want.

The next step is to add the tomatoes to the chip layer, then pile the ground meat jalapeno mix on top.

Sprinkle the shredded cheese on top and pour in the heavy cream. Pop the dish into the oven and cook until the cheese has melted.

Once done, sprinkle lettuce on top and add sour cream.

Serve and enjoy!
