Air Fryer Low Carb Peanut Butter Bars

These keto peanut butter bars are an easy low-carb dessert made in the air fryer. No heating up the house or baking them in the oven is required! Soft, chewy, and delicious!

My husband isn’t even a fan of the peanut butter chocolate combination but this keto dessert is one of his favorites. I have always loved peanut butter so when I made this air fryer dessert, I knew it would be something that I could snack on throughout the week but I had no idea they would disappear so fast because my husband also loved them.

Thankfully this is an easy air fryer recipe to make!

I love using my air fryer because it doesn’t heat up the house and everything bakes so much faster than in the oven. Whenever I come up with a new low-carb meal or keto dish, I try to figure out how I can make it even better using the air fryer.

No-Bake Keto Desserts

Since I started eating a low-carb/keto diet, I found a lot of ways to incorporate peanut butter. One of my favorite combinations is chocolate with peanut butter as you can probably tell from all of the recipes combining these two delicious flavors.

Some of my favorite desserts for the Summer are the no-bake kind. There is no reason to heat up the whole house just to make a keto dessert. So I usually make simple recipes that don’t require the oven during the hotter months.

How to Make Low Carb Peanut Butter Bars in an AirFryer

This low-carb air fryer recipe comes together in three different parts. The bottom, middle, and the top layer. There is a baking step, a melting step, and a freezing step. All of these steps are simple but when you look at this recipe you may see that it includes three steps and assume it is difficult but let me assure you this is an easy keto dessert.

So simple to make and the air fryer really speeds up the process, plus you don’t have to heat up your house in order to enjoy a delicious low-carb dessert.

Keto Peanut Butter Bars

The first layer includes almond flour, stevia, salt, butter, and vanilla. After mixing these ingredients together the next step is to pop them into the air fryer set at 375 degrees for 10 minutes.

Allow this to cool completely before moving on to the next step.

These low carb peanut butter bars are made in the air fryer. So easy and delicious, there is no reason to heat up the house using the oven.

The second step includes peanut butter, stevia, and vanilla. Once the mixture is made, it gets poured on top of the bottom cookie layer.

The last step is to melt unsweetened chocolate chips and mix them with heavy cream. This layer will be the top of these low-carb peanut butter bars then the entire pan will be placed in a freezer to harden completely. This can take about an hour or so. It is best to let the dish completely freeze before cutting it into this easy keto dessert.

Tips for Success

When making any recipe in the air fryer it is best to cut the time in half and check the trays. The way my air fryer is set up, the top racks get cooked faster than the bottom. So I always check on the food halfway through cooking and alternate the racks.

With this low-carb peanut butter recipe, it is best to freeze completely before cutting into the bars. If you pull them out too fast because you can’t wait to get a bite, they will be messy and the bottoms will stick to the pan, resulting in a less visually appealing snack.

Another tip for success is to make sure you allow the cookie part of this bar to cool completely before adding the other ingredients. Otherwise, the peanut butter layer will soak into the cookie, while this will still be delicious, it will not look quite as good when you work too fast.

Storing & Freezing Instructions

The best part of these low-carb peanut butter bars is that you can store them in an airtight container for up to 6 months. Maybe more but this is the rule I follow. No worries though because they probably won’t stick around long enough to go bad. They are so delicious you will probably finish them within the first week.

Low Carb Air Fryer Peanut Butter Bars Recipe

Cook Time: 10 minutes
Prep Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 3/4 Cup of Almond Flour
  • 3 Tablespoons of Stevia
  • Pinch of Salt
  • 3 Tablespoons of Butter
  • 1 Teaspoon of Vanilla
  • -------------------------------------
  • 1/2 Cup of Peanut Butter
  • 3 Tablespoons of Stevia
  • 1/2 Teaspoon of Vanilla
  • -------------------------------------
  • 8 Ounces Sugar Free Chocolate Chips
  • 4 Tablespoons of Heavy Cream

Instructions

  1. Mix the top layer ingredients together and then spread it into a small baking dish, an 8x8 works for thin bars, and a smaller dish will result in thicker bars.
  2. Bake in the air fryer at 375 for ten minutes.
  3. Allow cooling completely before moving on to the next step.
  4. Mix the second layer of ingredients and spread into a pan.
  5. Melt the chocolate and cream, and spread on top of the peanut butter layer.
  6. Freeze the baking dish and allow it to harden before removing it from the pan. This can take about an hour.
  7. Store in an airtight container for up to 6 months in the freezer.
