I have always loved cooking with chicken, well except that one time that we ate a locally sourced organic chicken aka one of our friend bob’s chickens. It was a memorable experience but this particular chicken was older than the ones you usually get from the grocery store and it had a gamey flavor. It freaked me out to pet the animal I would ultimately eat but not as much as I thought it would. I think I am ready for this homesteading life we are working towards but I will feed my chickens corn and never eat my cows, those fellas will be my besties.

Start with a whole chicken, cleaned and that little bag of chicken mystery removed from the inside. Pat the chicken dry and add what seasonings you want on your chicken.
I like to add a mix of my favorite seasonings to the side and create a rub before cooking a whole chicken in the slow cooker.
- garlic powder
- paprika
- salt
- pepper
- italian seasoning
- onion powder
Mix the seasonings in a bowl. Rub evenly onto the whole chicken and place in a slow cooker on high for about 4 hours or until your whole chicken reaches an internal temperature of 165 degrees.
Pro Tips for cooking a whole chicken in the slow cooker:
- If you would like a crunchier skin on your whole chicken before cooking place balled up foil at the bottom of your slow cooker to prevent the chicken from sitting in its own juices.
- To keep juice inside of your chicken, do not pierce the skin when removing the whole chicken from the slow cooker.
- Cooking on low heat longer will result in an even juicier chicken.
- Cooking on low heat for a longer amount of time, with the aluminum foil balls in the bottom will give your chicken a crispier skin.
