Simple Cashew Bread (Gluten Free, SCd, Paleo)

If you are following a Gluten free, paleo, or SCD diet, this simple cashew bread recipe is sure to be your new favorite grain-free recipe to replace traditional bread.

Not only is this a delicious homemade bread recipe but it is also the easiest gluten-free bread recipe that I have tried since starting my gluten-free journey and I think you’ll feel the same way.

Making bread without grain seemed impossible at first but after some experimenting in the kitchen this grain free sandwich bread proved it was possible to make a flourless sandwich bread with simple ingredients.

When I first started cooking for the Specific Carbohydrate Diet I really wanted a gluten-free bread that my whole family could enjoy but making bread without grains usually meant dessert breads, which aren’t the best for sandwiches.

I wanted savory bread or at least bread that wasn’t sweet bread and I am happy to report that this grain-free sandwich bread fits the bill!

Why Make a Grain-Free Cashew Bread?

This bread allows you to still enjoy sandwiches and toast, something that many of us would never have imagined when committing to a diet that is gluten-free.

Finding delicious grain-free bread options has always been a struggle until I discovered how to make bread with cashew butter. 

This flourless bread recipe is perfect for anyone on a restricted diet like Paleo, SCD, and those looking for gluten-free bread that is easy to make.

While this isn’t the first gluten-free bread I have made this cashew bread is a real game changer because it isn’t sweet.

Although I love the taste of gluten free banana cashew bread, it isn’t good when served with healthy homemade lunchmeats, it’s a sweet bread that is usually best for dessert.

So once I started to experiment with making bread with cashew butter I knew I was onto something special with this delicious recipe.

I used this cashew butter that I picked up online but you can make your own pretty easily.

How Do You Make Cashew Butter?

To make your own cashew butter you will need to start with about 2 cups raw cashews and 1-2 teaspoons of coconut oil.

Place cashews on a baking sheet and toast in an oven preheated to 325ºF for about 10-12 minutes.

Allow the cashews to cool and then put them in a food processor.

Run on high speed for about 10 minutes until they begin to cream then add in the coconut oil. Run for another 5-7 minutes.

Be sure to store the cashew butter in an airtight container or use it right away in this recipe.

How Do You Make Cashew Flour?

If you want to make your own cashew flour for this cashew bread recipe or for other gluten-free recipes, you can start with 2 cups of raw cashews.

Put them in a food processor and process until it reaches a flour-like consistency. You will have some bigger chunks that may not grind down, if that is the case use a fine-mesh sieve to filter them out.

Remove the flour that has reached the proper consistency, transfer it to another container, and then add the bigger chunks back to the food processor.

Process them until they reach the desired consistency and can pass through the fine-mesh sieve.

For best results, store your homemade cashew flour in an air-tight container in the freezer until ready to use in your next grain-free recipe.

Serving Ideas for Cashew Bread

When I make lasagna, I spread butter on a slice of this flourless bread, add a couple of shakes of garlic powder, and salt, then pop it in the oven for a couple of minutes, creating a delicious flourless garlic bread.

When making homemade tomato sauce I take a slice and dip it into the sauce to hold me over until dinner time, just like I used to do with plain bread made with flour.

Sometimes I just spread some cream cheese or butter on a slice as well as sprinkle some cinnamon on top to enjoy with my coffee. It’s also great when toasted and served with this 2 ingredient concord grape jelly.

Another delicious way to enjoy this flourless bread is to make gluten-free French toast!

Since it has been hard to find grain-free sandwich bread for SCD, my favorite way to use this cashew flour bread recipe is for making sandwiches.

That is what makes this recipe for cashew nut bread so great, it creates a versatile loaf that can be used just like traditional bread. This cashew nut bread is now a staple in my diet because it pairs well with everything.

How Do You Make Cashew Bread?

This recipe is so simple, all you need are 6 ingredients to create this SCD-compliant bread. Seriously, with only 6 ingredients, this may be the easiest bread you have ever tried to make.

How to Make Cashew Bread

As with all of my SCD recipes and low-carb recipes, I try to simplify the process whenever possible.

When I first began the Specific Carbohydrate Diet in order to heal my gut with food, I began browsing gluten free recipes online.

I was quickly discouraged when I found that they are usually pretty complex and they all seemed to use lots of ingredients that I was not familiar with yet.

I decided to not let that discourage me but it actually had the opposite impact, it inspired me. It started me on my journey of learning how to simplify complex recipes so I could eat normal food without causing damage to my gut, and feeling sick all of the time.

Once I realized that I wasn’t alone in my frustration, I started this food blog so I could share my easy recipes with everyone.

You shouldn’t have to be a certified nutritionist or a chef just because you have to eat a special diet.

Unfortunately, you do have to read a lot of my nonsense to get to the recipe but now I really am going to share how I made this soft and tender gluten-free bread with you, I promise.

Grease a 9 x 5 loaf pan with butter and preheat the oven to 350 degrees.

Mix all of the ingredients in starting with the cashew butter and eggs. After they are combined, add the rest.

Your flourless bread ingredients will look a little fluffy and you may be skeptical that it will become a solid bread in the oven, but don’t let that worry you, it will be a perfect loaf after baking.

Bake for about 35-40 minutes.

A toothpick inserted into the middle of this loaf will come out clean when the flourless sandwich bread is done baking.

Allow it to cool before enjoying, it will be easier to cut slices out of the loaf after cooling.

Simple Flourless Sandwich Bread

Ingredients

  • 2 Tablespoons of Honey
  • 1/8 Teaspoon of sea salt
  • 1 Teaspoon of Baking Soda
  • 1 Tablespoon of Lemon Juice
  • 5 Large Eggs
  • 1 1/4 Cup of Cashew Butter

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a mixer, combine the eggs and the cashew butter.
  3. Allow those two ingredients to mix together completely before adding in the next ingredients.
  4. Add in the lemon juice, baking soda, honey and salt.
  5. Pour ingredients into a greased 9 x 5 loaf pan.
  6. Bake for about 35-40 minutes. Allow to cool before slicing, it makes a cleaner slice.

Thanks for stopping by Roma but unfortunately that isn't going to work. The cashew butter is an essential part of this recipe although you may be able to try another nut butter with similar results. I would love to hear your feedback if you give it a try.
