How to Make Parmesan Tuscan Chicken Recipe

Step 1: Prepare Vegetables

Prepare the vegetables by rinsing and dicing the bell peppers and chopping the zucchini into bite-sized chunks. Set them aside for later use.

Step 2: Prepare the Chicken Breasts 

In a small bowl, combine 3/4 cup of almond flour with a teaspoon of garlic powder, and a pinch of salt and black pepper. Cut the chicken breasts into smaller, evenly-sized pieces, trimming any excess fat if needed. For even cooking, consider halving the chicken breasts lengthwise.

Roll each piece of chicken in the almond flour mixture until they are thoroughly coated, and then set them aside.

Step 3: Cook the Tuscan Chicken

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. You can use a cast iron skillet or a regular frying pan, either one works fine. Once the bottom of the pan is hot, add the breaded chicken pieces and cook them for about 5 minutes on each side until they turn golden brown.

Once cooked through, transfer the chicken to a plate and set it aside, allowing to come down to room temperature while working on the next step.

Step 4: Saute the Vegetables

Using the same skillet set to medium heat, add another tablespoon of olive oil if needed, and sauté the diced zucchini and bell peppers until they become tender.

Once cooked, remove them from the skillet and set them aside. They should have reached an internal temperature of 165 degrees when checked with a meat thermometer.

Step 5: Make the Creamy Sauce

In the same skillet over medium-high heat, add 6 tablespoons of butter, 8 ounces of cream cheese, 2 cups of heavy whipping cream, and 2 tablespoons of minced garlic.

Allow the mixture to simmer for approximately 5 minutes, stirring continuously until all the ingredients are thoroughly combined and the sauce starts to thicken.

Step 6: Perfecting the Sauce 

While the sauce is cooking, slice the cooked chicken into strips. Once the sauce has reached a thick consistency that is able to coat the back of a wooden spoon, add 2 cups of Parmesan cheese to the skillet, stirring until the cheese is fully melted and the sauce is smooth.

Step 7: Combine & Serve

Return the sliced chicken and sautéed vegetables to the skillet on medium-low heat, stirring gently to coat them evenly with the creamy sauce. Allow everything to simmer together for a few more minutes until heated through.
