Bacon, Egg, and Pepper Quick Skillet

This bacon, egg, and pepper quick skillet is the perfect way to start the day. It’s not just for breakfast either, this meal satisfies all day long. Filled with veggies, meat, and cheese, this hearty yet easy to prepare dish is perfect anytime!

I have always enjoyed a good quick skillet, even before keto and low carb recipes became a popular thing. I had no idea how much I would crave things like this once I dropped all of the starchy, sugary foods from my diet. Whenever I get hungry and need something fast, something so fast to keep me from putting something not keto in my mouth, I make one of these quick skillets. It’s probably one of the fastest ways to get a hearty, hot meal into your mouth, or at least one that isn’t going to break your diet.

In a medium-sized skillet heated on high temperature, cook 4 slices of bacon until crispy.

Remove bacon from pan and crumble into pieces. Crack 2 eggs into the skillet and add in the Almond Milk.

Add in the onions, peppers, tomatoes, and pieces of bacon.

Cook for about 2-5 minutes, depending on how hot the skillet remained from cooking the bacon. I have a solid frying pan that takes a bit to heat up but when it does, it really retains its heat for a while. I bought it when my family lived in Illinois and am now on a journey to find one just like it. It cooks everything so evenly and is a breeze to clean. When I find one like it, I will be sure to share it.

Ingredients

  • 2 Eggs
  • 4 Slices of Bacon
  • 1 Tablespoon of Died White Onion
  • 1/2 Tablespoon of Diced Jalapenos
  • 2 Tablespoons of Diced Tomatoes
  • 1/4 Cup of Cheese
  • 2 Tablespoons of Almond Milk

Instructions

  1. In a medium sized frying pan heated on high temperature, cook 4 slices of bacon until crispy.
  2. Remove bacon from pan and crumble into pieces.
  3. Crack 2 Eggs into frying pan and add in the Almond Milk.
  4. Add in the onions, peppers, tomatoes, and pieces of bacon.
  5. Cook for about 2-5 minutes, depending on how hot the skillet remained from cooking the bacon.
  6. Stir to make sure everything is cooked thoroughly and then serve immediately.
