Whenever the craving hits or you just don’t have a lot of time, make this easy recipe for a basic homemade cheesy omelet made with lots of vegetables, including bell peppers and onions.

If you like veggie omelets, then you have to try this simple bell pepper omelet made with onion, eggs, bell peppers and a sprinkle of salt for flavor.

Omelets are a great way to serve up a quick breakfast with little hassle and lots of veggies!
Even if you are not a vegetarian, you will enjoy this recipe and you can add in any meats that you would like to beef up this omelet.

This is the perfect easy breakfast omelet for those on special diets like the Specific Carbohydrate Diet because it is made from all “legal” ingredients and is super healthy!
The first thing you will need to do is prepare the veggies in a frying pan.
Add in a tablespoon of olive oil and about a half a cup of frozen peppers and onions.
Allow the frozen veggies to cook for about three minutes or until softened, making sure to stir to prevent sticking to pan.

In another pan, add a tablespoon of olive oil and let it heat up.
Next, crack two eggs in a bowl and whisk until completely mixed, your eggs should be a bright yellow now.

Add in almond milk and continue to whisk until fully incorporated.
Add the mixture into the pan, allow to spread out through most of the bottom of your pan.
Leave a little room for your spatula to get in there and flip once your egg begins to brown around the edges (about 2 minutes in).

Flip the omelet using a rubber spatula and add in fully cooked peppers, onions, and sprinkle cheddar cheese as well as salt or pepper to taste.
Cook until the cheese melts and the bottom is fully fluffed like the top of your omelet.
Fold the top over the filling and serve.
