Gluten Free Coconut Cookie Recipe – Low Carb Noatmeal

This gluten free coconut cookie recipe captures the familiar allure of an oatmeal cookie while delighting your taste buds with a burst of cinnamon and a hint of coconut flavor.

If you are following a low carb diet but are craving traditional cookies made with oatmeal, these “noatmeal” cookies will be your new favorite cookies.

This easy recipe was inspired by a recent post that shares how to make coconut milk from shredded coconut using a food processor.

I am not a fan of wasting anything and after making that recipe, I decided to use the leftover unsweetened coconut flakes to make these delicious cookies.

Plus, I have a sweet tooth that just won’t quit so having low carb sugar free cookies in my fridge is always a good idea.

Gluten Free Coconut Cookie Recipe

These golden brown cookies combine two of my favorite things, a soft, luscious interior enhanced by the delightful chewy texture of coconut flakes, resulting in a truly perfect cookie.

Usually, I am not a coconut lover but the addition of wholesome ingredients like cinnamon and Swerve brown sugar has transformed my perception of this ingredient.

While I have used coconut oil quite a bit and have made a few coconut flour recipes, I usually choose to make almond flour cookies.

Now whenever I bake cookies with gluten-free flour, I am more open to using ingredients like fresh coconut, coconut sugar, coconut chips, and my new favorite ingredient, unsweetened shredded coconut.

Ingredients

Almond flour: This gluten free flour blend forms the gluten-free foundation of these cookies, offering a soft, wheat-free texture that seamlessly substitutes for traditional all-purpose flour.

Cinnamon: Cinnamon infuses these gluten-free coconut cookies with a warm and comforting flavor reminiscent of oatmeal cookies, adding a delightful layer of sweetness and spice.

Baking Soda: Acting as the primary leavening agent, baking soda is the secret ingredient that helps these cookies rise slightly, contributing to their ideal softness and chewiness, without the need for baking powder.

Salt: A pinch of salt balances the sweetness of the cookies and enhances the overall flavor, making all the ingredients harmonize beautifully.

Butter: Butter brings richness and a buttery flavor to the cookies, contributing to their wonderful texture and mouthfeel without the need for cane sugar.

Brown Sugar: Brown sugar, in this case, the low-carb Swerve variety, imparts sweetness and a hint of caramel-like notes to these chewy cookies without causing a sugar spike.

Liquid Stevia: Liquid Stevia provides an additional layer of sweetness to the cookies, and since it’s a sugar-free alternative, it helps keep the overall sugar content in check, perfect for a low calorie diet.

Vanilla Extract: Vanilla extract adds depth and aroma to these cookies, enhancing their overall flavor profile and making them more inviting.

Coconut Flakes: Using coconut flakes, brings these cookies to the next level, contributing to both the texture and flavor.

Sugar-Free Coconut Cookie Recipe Instructions

If this is your first time reading one of my dessert recipes you may not be aware but I always keep everything as simple as possible.

This recipe uses leftover ingredients from making your own coconut milk which means the flakes are already run through the food processor, to replicate this exact consistency you may want to shred your coconut into a flour-like consistency first.

Step 1: Preheat Your Oven

This recipe is no different, so the first step is to preheat your oven to 350 degrees and then soften the butter, no need to melt butter, just make it easily mixable. 

Step 2: Mix Ingredients

Next, just throw all of the dry ingredients and wet ingredients into a large mixing bowl, mixing at medium-high speed.

No need to perform a dish orchestra here, we’re not the kind of recipe blog that conducts a symphony with a medium bowl, a large bowl, and a random seven cups.

And forget about those mysterious ingredient timeouts; just toss everything into one bowl and let the culinary magic happen in a jumble of delicious chaos!

Step 3: Prepare a Baking Sheet

Prepare a baking tray with parchment paper. The raw cookies will spread out while baking so if you are using one pan, make sure it is a large baking sheet or several prepared baking sheets for best results. 

Step 4: Form the Cookies

Use a small cookie scoop or small ice cream scoop to scoop dough onto the cookie sheet. Aim for 1 1/2-inch balls spread about 2 inches apart to make 12 cookies.

For crispy cookies with crispy edges, shape them into thinner discs rather than thicker mounds.

Step 4: Bake the Cookies

Bake for 10 minutes then pull out of the oven, and allow to sit at room temperature for about five minutes before transferring to a wire rack.

Variations on this Gluten Free Cookie Recipe

While I feel this no-sugar cookie is perfect the way it is, I understand the need to try different things to suit your taste buds or to fit into your daily values.

Use coconut flour in place of coconut flakes for coconut flour cookies that resemble coconut macaroons. Just be careful and be sure to use a measuring cup because using too much flour, especially coconut flour can easily dry out these cookies.

For those seeking a dairy-free twist, swap out regular butter for luscious coconut butter with a splash of almond milk. If you’re following a vegan diet, try using a flax egg as a perfect egg substitute. 

Craving chocolate chip cookies or chocolate coconut cookies?

Toss in a handful of chocolate chips, and melted chocolate, or consider incorporating dark chocolate for an extra chocolate chip cookie dough that resembles an almond joy candy bar. 

For added protein, consider incorporating egg whites the next time you make this recipe. Use brown butter or add a dash of almond extract and maple syrup to elevate the cookie’s aroma. 

Peanut butter enthusiasts can’t go wrong by mixing in their favorite spread for a nutty twist.

Experimenting with flours? Opt for oat flour for a wholesome alternative. To enhance texture and structure, a pinch of xanthan gum can be a secret weapon in your cookie recipes.

Gluten Free Coconut Cookie Storage Tips

Store these cookies in an airtight container for 3-5 days at room temperature.

If you want to extend their shelf life, you can refrigerate the cookies in an airtight container, and they should stay good for about 1 to 2 weeks.

This is my preferred way to store them because I enjoy a cold cookie with my morning coffee and they stay fresh for a long time. 

For longer storage, you can freeze the cookies in an airtight container or freezer bag. When frozen, they can maintain their quality for 1 to 2 months or more.
