This recipe doesn’t take a long time because it never needs to reach the hard crack stage or the soft ball stage, there isn’t even a cup of sugar or any baking soda required to make this perfect recipe.

Since this is made in a heavy saucepan with a handle you may not even need oven mitts.

This perfect holiday treat was made famous by the Davenport Hotel located in Spokane Washington.

For those who reside on the other side of the United States, attempting to make the same brittle texture in their own kitchen meant trying to figure out the secret of the candy making process.

The original recipe uses a double boiler method and a sugar mixture consisting of light corn syrup which is usually used in the hard candy version of peanut brittle.

This recipe proves that using this method is not the only way to make the best peanut brittle with a soft texture.

Instructions

Step 1

Start by preparing a baking sheet with parchment paper for easy removal. 

Step 2

Then in a large saucepan combine sugar substitute, 3 tablespoons of cream, and butter over medium-high heat.

Your goal is to achieve a rich golden hue, and this step may take approximately 8 to 10 minutes. Vigilantly stir the mixture throughout to prevent it from sticking to the bottom of the pan.

You can consider increasing the heat to expedite the thickening process, but exercise caution as this might alter the texture.

Step 3

Once the mixture attains its desired golden color, remove the saucepan from the heat source.

Add the vanilla and the remaining cream to the mixture and give it a thorough stir. Incorporate the peanuts into the mixture, ensuring they are evenly distributed.

Step 4

Gently pour candy mixture onto the prepared baking sheet. If you are using a deep pan, you may not be able to fill it.

Keep a watchful eye while pouring, as if the mixture is too thin, it won’t cover the entire sheet. You can either stop halfway through or consider doubling the recipe to create larger portions. 

In my opinion, adding salt makes this the best candy. So before popping the tray into the freezer sprinkle a tsp salt or more if you prefer, on top of the liquidy mixture.

The last step is to freeze the soft peanut brittle overnight. This essential chilling process allows the brittle to set and achieve its signature, delectable texture.

Step 6

Once it’s thoroughly frozen, remove it from the freezer, and carefully break it into serving-size portions.

Storage 

Store this recipe in an airtight container in the refrigerator for up to two to three weeks or in the freezer for about 3 months.

For best results do not store this recipe at room temperature.
