That’s why I enjoy creating easy peasy crockpot recipes for the Specific Carbohydrate & Paleo Diet. Keeping it simple is the best way to stay on track and put your health first no matter when the craving for a delicious dessert hits.

This apple cobbler recipe is the perfect way to enjoy the typical Fall flavors of apples and spice alongside a creamy ice cream that is also both gluten and sugar free.

I started out by peeling apples and then slicing them into a few chunks before dropping them into the crockpot. I then added the seasoning along with the honey on top of them.

In a separate bowl, I mixed the almond flour, coconut flour and baking soda together to create the crumb top of this apple cobbler recipe.

Once I had a good mixture of the dry ingredients, I sprinkled that on top of the apple mixture, poured butter on top and let it cook on high for about a half hour before stirring.

You can mix it in right away if you want to set it and forget it as they say but I like to wait until the liquid from the apples starts to seep out, it allows the mixture to crisp against the sides of the crockpot a bit.

Allow the apple cobbler to cook in the crockpot for about 2 to 3 hours.

To make the sugar free and gluten free vanilla ice cream, just mix one can of coconut milk, 4 teaspoons of vanilla extract, 3 Tablespoons of almond milk and 2 tablespoons of honey in a blender.

Once blended add to an ice cream maker for about 25 minutes and then freeze for another half hour to an hour or so depending on the consistency you enjoy your ice cream to be.

This recipe is so easy and if you follow the Specific Carbohydrate Diet you know that anytime you can make a delicious recipe like this in a crockpot, it’s a good day.

The best part is that even if you do not follow SCD, Paleo, GAPS, Gluten Free, or a Sugar Free diet, you will love this Crock Pot Apple Cobbler!

This gluten-free crock pot apple cobbler is perfect for the Specific Carbohydrate Diet.

Ingredients

  • Bag of Gala Apples
  • 1 Teaspoon of Vanilla Extract
  • 1/3 Cup of Honey
  • 1/2 Teaspoon of Ginger
  • 2 Tablespoons of Cinnamon
  • 1 Teaspoon of Nutmeg
  • 1/2 Cup of Almond Flour
  • 1/4 Cup of Coconut Flour
  • 4 Tablespoons of Butter
  • 1/2 Teaspoon of Baking Soda
  • ----------------------------------
  • For the Ice cream
  • 1 Can Coconut Milk
  • 4 Teaspoons of Vanilla Extract
  • 2 Tablespoons of Honey
  • 3 Tablespoons of Almond Milk

Instructions

  1. Peel apples and add to crock pot. Add in honey, ginger, cinnamon, nutmeg, and vanilla. Stir.
  2. In separate bowl, mix dry ingredients.
  3. Sprinkle dry ingredients on top. Pour Butter on top of that.
  4. Stir together and cook for about 2-3 hours.
  5. For the ice cream, mix all ingredients in blender than add to ice cream maker. Freeze for an additional half hour to an hour depending on consistency you would like.

Notes

Add in more of your favorite flavors for an extra burst in each bite. Increase the cinnamon, add in ginger and nutmeg, or sprinkle in your favorite toppings.

  7. My grandfather was an Englishman, a cobbler to him always involved lots of fruit & sugar underneath, with ‘cobbles’ of scone dough on top, giving a lumpy feel. The version my grandmother made for him looked almost like a sort of fruit toad-in-the-hole

    That said, yours looks delicious, and I’d love to give it a try. We have guests coming this weekend and we have lots of apples on the kitchen counter from a trip to the orchard. Sounds like it was meant to be! x

  9. I always see crockpot apple recipes, but I’ve never tried one! This looks SO incredibly good. I love all sorts of apple desserts – especially this time of year! – so I definitely need to try it out. I can only imagine just how delicious it makes the house smell too! Sooo amazing!     • I would suggest freezing the ice cream for double the amount of time. This may tend to get a little harder and less creamy than with a maker but if you pull it out of the freezer and let it sit at room temp for about 15 minutes you may be able to achieve a better consistency.

  11. OH NO!!!! In the instructions you said 4 Tablespoons of vanilla extract….. and of course I blindly followed that not thinking without reason. I see below you listed as Tsp. My brain has been fried as I struggle to find SCD recipes for my little girl who is sick.

    • Sorry about that, sometimes getting the recipe up can be a challenge, I appreciate the feedback. I updated the recipe to reflect the teaspoon instead of tablespoon like you have mentioned. I love vanilla so I would probably enjoy it either way. lol

    • I have only made this with peeled apples so I’m not sure if it would work either way. If you are brave and up for an experiment i would love to hear about your results but if you would like a sure thing, peel them first. Thanks for stopping by and good luck.

    • I am not sure, I guess it depends on how much you would consider a serving. I would probably go by how big your serving dishes are and quadruple the recipe, if I were you. 25 people is quite a task, good luck and enjoy!

    • Hi Becky! Thanks for stopping by and commenting. I would try replacing honey with liquid stevia but I am not sure of the exact amount for this recipe. As a general rule, it is suggested to replace 1 cup of honey with 1 teaspoon of liquid stevia but in a crockpot recipe this could be a problem if there is not enough liquid. So I would suggest using your best judgement and monitoring it. Please let me know how this turned out!
