When I first started this website. almost 3 years to the day exactly, I was newly diagnosed with Ulcerative Colitis, a disease that I often explain as it’s kinda like Crohn’s Disease, have you ever heard of that?
Just like many people given this grim diagnosis my first reaction was to learn everything I could about getting healthy again.
I googled every combination of words and phrases that I could come up with to hopefully lead me on my new path of self healing since my other option was to take lots of pills with lots of side effects for life.
Once the pills stop working, I would move onto heavier stuff like biologics that have common side effects like cancer.
Oh and I was told that everyone is different, there is no known cause or cure to this disease and there is no telling when the medicines will stop working for me or if they will work for me at all.
It seemed hopeless and in the words of Connor Mcgregor, I was fooked!
That was how I felt until I eventually stumbled on the Specific Carbohydrate Diet better known as SCD and decided to give it my all.
I was thrilled at the idea of having a “cure” to my disease and felt like I had a pretty solid grasp on the cause at this point despite the fact that doctors repeatedly dismissed the idea that food had anything to do with this disease.
Unfortunately over the course of the next couple of years despite my efforts to implement SCD into my lifestyle, I ultimately had to have that dreaded surgery to remove my colon and change my life forever.
After the surgery due to more complications that could lead to even more surgeries I am unable to eat most vegetables, fruits, seeds, or anything plant based.
This has made it especially difficult to maintain a healthy diet and has caused me to gain weight so I have decided to start making more SCD recipes again to get me back on a overall healthy diet again.
It also helps when I get the occasional email or comment from someone who has tried my recipes and expressed their gratitude for having delicious foods again.
A lot of people are stumbling upon this way of life after getting their diagnosis of one of the many Inflammatory Bowel Diseases that have become quite common these days.
They relate to my story and want to help themselves as well, but it can be hard to get started on a diet like SCD.
The Specific Carbohydrate Diet requires a lot of home cooking, hardly any pre-packaged foods, and a lot of preparation for every meal.
After doing the diet for a while you start to find little tricks that work for you but in the beginning, it can be intimidating to adopt this new lifestyle.
When first looking at “legal” foods, I remember people asking me “No flour, sugar, or potatoes, well what do you eat?” as if I was just adopting this diet for fun and it was all an elective practice that I took upon myself to be some kind of food martyr.
The answer was that I ate lots of things but I made almost all of them from scratch using ingredients like almond flour, coconut milk, and honey.
People never got it but that never stopped me before, I grew up in a family that never really got me so I was used to being a bit of a loner.
I made lots of delicious recipes and occasionally would share them with non SCDers and it almost always turned out that my recipes were awesome.
Of course there was an occasional recipe that did not turn out so well but I took it in stride and made the appropriate adjustments until I got it right. I then started to share them on the site and the response has been amazing.
I recently got a couple of messages regarding my recipes and it has made me want to share more so without further ado, here is my newest creation, Pumpkin Spice Cupcakes!
I am still working on the frosting recipe so I can not share it until it is perfect but until then, these are delicious with a coconut milk based recipe that you find pretty easily on Pinterest or add a scoop of SCD Ice Cream, you can find that recipe here.

SCD Pumpkin Spice Cupcakes
Ingredients
- 1 Can Pumpkin
- 3 eggs
- 1/ Teaspoon Baking Soda
- 2 Tablespoons Vanilla Extract
- 1/2 Cup of Honey
- 1 Cup Almond Flour
- 1/4 Cup Coconut Flour
- 2 Tablespoons Cinnamon
- 1/4 Teaspoon Ginger
Instructions
- Mix the pumpkin and eggs together in a mixer until they are well blended together. Add in the baking soda, vanilla, honey, and spices. Then add in the flours while still mixing,
- Bake in preheated oven at 350 degrees for about 35 minutes!

I think I would use my typical carrot cake icing. Dry curd cottage cheese blended with soft unsalted butter. But maybe for these I would mix in a little cinnamon or pumpkin spice. Blend it up smooth and then I’d place on cooled cupcakes. Then eat right-a-way or place in fridge to set the frosting before eating.

Wow these look SO good! I've seen so many pumpkin recipes lately and they all look so good. I would love to try making these this fall - they look amazing! They came out so pretty too! Love the way you decorated them!
