Easy Low Carb Cauliflower Lasagna

You will never go back to traditional pasta after trying this low-carb cauliflower lasagna. It is the perfect comfort meal without all of the guilt that comes with storebought noodles! Satisfy your pasta cravings with this low-carb dinner idea.

Keep in mind that this recipe is simplified so there is no need for fancy equipment to make pasta noodles. These “noodles” are actually a simple batter that gets baked in the oven and then used as a layer in the final dish. This is the easiest way to make low-carb cauliflower lasagna noodles without sacrificing flavor.

Variations on this Low Carb Cauliflower Lasagna

I have always been the kind of cook that works with what I have on hand. When I am in the middle of cooking and learn that I am short on something the recipe calls for, I improvise. Sometimes these variations on the original recipe cause me to change how I make it from then on. Bob Ross refers to these types of things as happy little accidents and I think it applies perfectly.

There are many easy ways to switch things up with this recipe. You can easily enhance the flavor or tailor it to fit your taste buds.

Meat– This recipe is delicious with many different types of meats. This cauliflower lasagna is great with ground beef, venison, and Italian sausage, or a combination of all three. Don’t be afraid to try something new like chicken, I may experiment with that one soon!

Cheese– While this recipe already calls for a few different kinds of cheese, you can never have enough. Adding provolone is always a nice addition and if you like a little spice, Monterey jack can give this dish a nice subtle kick.

Vegetables– Add your favorite steamed vegetables to this dish easily. Some of my favorite vegetable add-ins are zucchini and bell peppers.

Frozen Cauliflower– Instead of using a head of cauliflower, if you have frozen cauliflower on hand, this can work too. Some frozen cauliflower steams right in the bag and this makes the process much easier by using fewer dishes and not requiring chopping the whole head of cauliflower.

How to Make Lasagna with Cauliflower

This meal comes together in three different parts. The cauliflower lasagna noodles, the sauce, and the cauliflower lasagna assembly.

Cauliflower Lasagna Noodles

Chop a head of cauliflower into florets and boil in a pot of water. Once the cauliflower is tender to the touch, remove it from heat and strain out the excess water. Add the cauliflower to a blender along with 2 eggs, 1 package of cream cheese, and a dash of salt.

Once the batter is creamy and smooth, pour it onto two baking sheets lined with parchment paper. Bake in an oven preheated to 325 degrees for about 20 minutes.

The Sauce

Start the sauce by drizzling olive oil into a frying pan heated to medium-high heat. Add diced onion and garlic, and cook until onions become translucent. Add to a pot of tomato sauce and tomato paste, along with all seasonings. Cook ground beef and add to the sauce. Set aside, heat on low while cooking lasagna noodles to allow the flavors to merge.

The Assembly

Scoop a few teaspoons of sauce onto the bottom of a 13×9-inch baking dish. Once the cauliflower has been cooked and cooled enough to handle, place one layer of cauliflower lasagna in the bottom of the pan.

If the batter is still gooey you may need to scrape the parchment paper to allow it to spread out evenly. Gooey doesn’t mean bad, once the lasagna is assembled and baked, all of the ingredients come together nicely, no matter how much of a mess you make with the cauliflower lasagna noodle layers.

Trust me, I say that from experience. I have made quite a mess and stopped worrying about how messy the process gets at times, it always comes out delicious!

If the batter hasn’t become stiff the transferring process can be difficult but not impossible. In one quick motion, flip the parchment paper upside down over the lasagna pan, allowing it to fall straight down into the pan.

Add a layer of sauce and cheeses, then add another layer of cauliflower lasagna followed by the rest of the sauce and cheeses. Bake or freeze the assembled lasagna following the instructions below.

How to Store Low Carb Cauliflower Lasagna

This is a great low-carb meal to make ahead. Prepare the lasagna by cooking the sauce, cauliflower noodles, and meat, then assemble the lasagna. Store in an airtight container and bake at a later date.

If you are planning on making this meal way ahead, freeze the cauliflower lasagna. This can be pulled out and baked for a quick and delicious, no-fuss meal. Keep the top covered with foil until it is about 75% cooked, this way the middle heats up evenly and the top doesn’t burn.

Be sure to thaw the lasagna entirely in the refrigerator before cooking. This can help to avoid burnt edges and ensure that your lasagna is cooked evenly.

Ingredients

  • For the Cauliflower Lasagna Noodles
  • 1 Head of Cauliflower
  • 8 Ounces of Cream Chese
  • 2 Eggs
  • Dash of Salt
  • For the Sauce & Meat
  • 1 small onion
  • 4 Tablespoons of diced garlic
  • 1 Tablespoon of olive oil
  • 1 lb. Ground Beef
  • 12 Ounces of Tomato Paste
  • 24 Ounces of Tomato Sauce
  • 1 Tablespoon of garlic powder
  • 1/2 Teaspoon of onion powder
  • 1 Teaspoon of basil
  • 1/4 Teaspoon of Pepper
  • 1/ Teaspoon of Salt
  • Dash of Cayenne Pepper
  • 16 ounces of Ricotta Cheese
  • 1 Cup of Parmesean Cheese, grated
  • 2 1/2 Cups of Mozzarella Shredded

What is the carb count on the lasagna. All I could find is "It's low carb" That's too subjective. My carbs are under 20 and without knowing where this hits I won't make it. It looks delicious.
