Chili Cheese Quesadilla

Leftovers have gotten such a bad wrap and I just can not imagine why because they are pretty awesome in my opinion.

It’s like a bonus meal that you don’t have to spend time preparing. Plus, it can be really useful in lots of recipes like this Chili Cheese Quesadilla Recipe made from the leftovers of this crockpot chili recipe.

I usually make this chili recipe for my family of three and we get two nights of very filling meals out of it. I then take those leftovers and create these Chili Cheese Quesadillas along with a few simple ingredients to make these quesadillas extra delicious!

I usually have all of the other ingredients needed to make the Chili Cheese Quesadillas on hand because we also have a taco night every week.

For those of you that are keeping score, that’s another point for leftovers.

All you need is some refried beans, cheese, onions, sour cream, 2 tortillas, and that leftover chili or a can of chili if you are lacking in the leftover department. 

Easy Crock Pot Chili

The next step is to heat up a griddle, if you don’t have on then grab a giant frying pan, if you don’t have one of them, you will need to click those links and pick one up.

At this point, I am starting to doubt that you even have a kitchen or that you have any intentions of making this Chili Cheese Quesadilla in the first place.

 

For those of us that are hungry and want to eat something delicious, this is where you would want to warm up your frying implement, whichever one you have.

Slap a thin layer of butter or margarine onto one side of each tortilla. Lay one tortilla on the frying pan and then add all of your ingredients.

Then grab the other tortilla, slap it on top, and grill both sides of the tortilla until it reaches the desired crisp you want.

Chili Cheese Quesadilla

This easy chili cheese quesadilla is the perfect quick meal made with leftover chili. Simple and delicious!

Ingredients

  • 1/4 cup of refried beans
  • 1/2 cup of cheese
  • 2 tablespoons of diced onions
  • 2 Teaspoons of sour cream
  • 2 tortillas
  • 1/2 cup of leftover chili (try my recipe which is linked to in this post, or buy a can)

Instructions

I agree with you...I love leftovers! Actually I make meals with leftovers in mind. I always plan two meals at once! Quesadillas are a great way to use up leftover ingredients, and they're always a family fave!

It's been way too long since I've had a Quesadillas! It's one of those classic yet easy to make Mexican inspired recipes that I always forget about. Tacos, chili yes always making them, but I seem to forget about QUesadillas. Thanks for reminding me to enjoy this toasted delight as well.

This is such a great way to re-purpose chili. I am always at a loss for what to do with them when you make a large pot and never even considered turning it into quesadilla filling. I'm trying this out this weekend.
