Leftovers have gotten such a bad wrap and I just can not imagine why because they are pretty awesome in my opinion.
It’s like a bonus meal that you don’t have to spend time preparing. Plus, it can be really useful in lots of recipes like this Chili Cheese Quesadilla Recipe made from the leftovers of this crockpot chili recipe.
Having a crockpot is also an underrated time saver and since I picked up a Crockpot that stirs itself, it has made its way to the top of my list of favorite things.
I usually make this chili recipe for my family of three and we get two nights of very filling meals out of it. I then take those leftovers and create these Chili Cheese Quesadillas along with a few simple ingredients to make these quesadillas extra delicious!
I usually have all of the other ingredients needed to make the Chili Cheese Quesadillas on hand because we also have a taco night every week.
For those of you that are keeping score, that’s another point for leftovers.
All you need is some refried beans, cheese, onions, sour cream, 2 tortillas, and that leftover chili or a can of chili if you are lacking in the leftover department. If you do end up picking up a can of chili you should grab one that is similar to this kind here because it is a similar consistency to my chili recipe.
At this point, I am starting to doubt that you even have a kitchen or that you have any intentions of making this Chili Cheese Quesadilla in the first place.
For those of us that are hungry and want to eat something delicious, this is where you would want to warm up your frying implement, whichever one you have.
Slap a thin layer of butter or margarine onto one side of each tortilla. Lay one tortilla on the frying pan and then add all of your ingredients.
Then grab the other tortilla, slap it on top, and grill both sides of the tortilla until it reaches the desired crisp you want.
