Easy Chocolate Fudge Without Condensed Milk

Many traditional fudge recipes call for condensed milk because it is an easy way to get the right texture and sweetness since it is loaded with sugar. This is something most of us can easily get our hands on and is fairly cheap at the grocery store. For those of us watching our sugar intake, there is no need to add all of that sugar to your fudge mixture.

I like to make this simple chocolate fudge using basic ingredients that will fit into many diets, including keto.

How to Store this Easy Chocolate Fudge

This easy chocolate fudge stores perfectly in an airtight container in the refrigerator. If you want it to keep longer, store it in the freezer.

If you do decide to freeze this chocolate fudge, I would suggest pulling it out before serving. Let it sit at room temperature for a few minutes, for best results.

This is the easiest way to get that creamy texture that you would expect from the traditional method.

The Basic Ingredients Needed to Make Easy Chocolate Fudge Without Condensed Milk

This recipe calls for parchment paper and plastic wrap, as well as a 8 x 8 square pan.

When making low-carb desserts, I prefer to use these sugar-free milk chocolate chips. There are many fudge recipes, including a popular rocky road fudge that requires a double boiler, a candy thermometer, confectioners sugar, cocoa powder, marshmallow fluff, mini marshmallows, and evaporated milk but I like to use simple ingredients whenever possible.

No need for residual heat or special equipment to create a finished fudge that takes very little time. This simple fudge recipe is made with basic ingredients but it rivals the flavors of old-fashioned fudge.

How to Make this Easy Chocolate Fudge Without Condensed Milk

In a medium saucepan set to high heat, add in the heavy cream, the vanilla, the butter, the peanut butter, and the erythritol.

As the pan heats up, begin smashing the peanut butter into the pan to help it mix in with the other ingredients.

This becomes easier to do as the mixture heats up because the peanut butter will start to melt. Cook on high heat until the mixture almost reaches a boil.

Remove from heat if your mixture starts to bubble then put back on heat as it cools off and stops bubbling.

There is no need to boil the ingredients and if they reach a boiling point you may begin to burn the mixture. This process only takes about 10 minutes. Your mixture will look like the photo below when you are ready to move on to the next step.

While waiting for the mixture to cook, you should line a baking dish with parchment paper. This way you will have a prepared pan to put the mixture in once done. The next step does not take a long time so it is best to be prepared for pouring when the time comes.

The next step is to add in the chocolate and cook until it melts. Stir to make sure everything mixes together well. This shouldn’t take very long as the mixture is already hot.

The chocolate will melt pretty quickly once poured in. Add in the cashews and stir to make sure everything is combined, then pour into the prepared pan.

Cover your fudge with aluminum foil, then put this homemade treat into the refrigerator while the fudge sets. This can take about half an hour or so, depending on the size of the pan you have used. The thicker the fudge, the longer it will take for your finished fudge to be ready to eat.

Variations of this Easy Chocolate Fudge Recipe

While I believe this easy chocolate fudge recipe deserves a high star rating, I know that not everyone’s taste buds are the same. There are many easy variations that can be done to create the best fudge recipes using different ways. If you prefer an easy peanut butter fudge, you can easily use less chocolate or none at all while still using this basic recipe.

Another variation that will result in different flavors is by using a different type of chocolate. You can try white chocolate chips, dark chocolate chips, or even peanut butter chips to create a different type of fudge while still using this easy method.

If you prefer a microwave fudge, you can use a large microwave-safe bowl to cook the ingredients. Be sure to pull the mixture out and stir in 30-60 second intervals. Add the chocolate and cashews in last and be sure to check often to prevent burning.
