One of the things that inspired this Chocolate Keto Peanut Butter Balls recipe is not having a lot of time. I wanted something chewy and decadent but didn’t have the time to make an elaborate keto-friendly snack.
I love peanut butter more than anyone should ever admit to and cream cheese is pretty close to perfect as well so I thought why not mix the two?
Soften an 8 ounce brick of cream cheese and then mix it with one half of a cup cup of keto friendly peanut butter. After the two are combined, form the mixture into balls.
This last step adds the perfect crunch to these keto treats and will satisfy my chocolate craving fast. Roll the peanut butter cream cheese balls in cacao nibs. If you aren’t in love with the aftertaste of cacao nibs I would suggest using less than I did for this step.
I would encourage you to still give it a try this way because that crunch and chocolate flavor really pair well with the creamy peanut butter taste. If you hate cacao nibs, these keto peanut butter balls are pretty close to perfect all on their own without the addition of keto-friendly chocolate.
You could even melt the cacao nibs and then coat the balls with a keto candy coating if you would like but be sure to refrigerate the peanut butter balls after forming them and before dipping in chocolate. This will ensure they stay put together through the dipping process.
