Is It OK to Eat Cheesecake on Keto?

Absolutely! Cheesecake is a great option for the ketogenic diet when prepared properly. With just a few ingredient swaps you can make a classic cheesecake fit perfectly into a low-carb diet. The most important thing to keep in mind when making a regular cheesecake recipe into a keto cheesecake recipe is the sugar and flour.

Classic cheesecake, even sugar-free cheesecake usually has a crust filled with carbs. This recipe swaps out the traditional graham cracker crust for an almond flour crust which helps make this creamy cheesecake a low-carb dessert.

The creamy filling in a low-carb cheesecake doesn’t contain any added sugar and when combined with the keto cheesecake crust, this combination makes this the best cheesecake for those following a keto diet.

What Makes this the Best Keto Cheesecake Recipe?

It’s delicious and super easy, what’s not to love about that?

Check out the recipe card at the bottom of this post to see exactly how simple this great recipe is to make. There you will find exact measurements and instructions on how to make this low-carb cheesecake recipe.

Unlike traditional cheesecake recipes, the best part of this recipe is that it doesn’t require a water bath. I have always hated that step in the classic cheesecake recipes I have tried out over the years.

It only requires easy ingredients that anyone can buy from a traditional grocery store and throw together pretty easily. This isn’t a complicated recipe, anyone can create this delicious cheesecake for a low-carb diet.

What Can I Swap for Sugar in Cheesecake?

When making the cheesecake filling you can swap out regular sugar for stevia, erythritol, or monk fruit.

There are many options for sweeteners and most will work as a replacement for the real thing. I find that the flavors of full fat cream cheese, vanilla extract, and lemon juice help to curb my sweet tooth.

What You’ll Need to Make this Low Carb Cheesecake Recipe

This recipe is made up of two simple parts, the crust, and the cheesecake batter. The crust calls for almond flour, butter, and cinnamon. Three simple ingredients that most people following a keto lifestyle have on hand.

The center of the cheesecake is made up of two blocks of cream cheese, sour cream, stevia, eggs, vanilla, and lemon juice, much like the classic dessert.

The only thing that is really different about this sugar free dessert is the stevia but the good news is that if you have made other keto desserts you probably have that on hand already.

How to Make this Low Carb Cheesecake Recipe

The first step in this recipe is to mix the crust ingredients together. I use a stand mixer to do this but you can use a spoon, food processor, electric mixer, or hand mixer if you prefer.

Just be sure to use melted butter for the best results. After the ingredients are combined, press them into the bottom of a springform pan. No need to press against the sides of the pan, only the bottom of the pan needs a crust, not the edges of the cake.

Bake the crust in an oven heated at 325 degrees for 9-10 minutes.

Instructions for the Cheesecake Filling

While the crust bakes you can start to work on the cheesecake filling.

In a large mixing bowl mix the cheesecake filling ingredients starting with the cream cheese. It helps to soften the cream cheese before working with it otherwise you will end up with a lumpy cheesecake with lots of holes or bubbles.

In my opinion, this doesn’t alter the taste at all but you will not get as beautiful of a presentation or smooth texture in some bites.

To avoid a lumpy cheesecake, place the cream cheese in a microwave-safe bowl and heat it up for about 20-30 seconds. Not to the point where it melts but just soft enough to easily be whipped by a mixer then add the cream cheese to a large bowl.

Next, add in the sour cream, stevia, and mix until well combined. Then add in the lemon juice, vanilla, and eggs. Mix until everything is well combined before pouring it into the already-baked crust in the spring form pan.

Tips for Using a Springform Pan for Baked Cheesecake

If your springform pan leaks, you can place the prepared pan on a baking sheet to prevent any leaks in the oven.

I haven’t experienced any leaks in my springform pan when I bake cheesecake but I have had leaks when making other keto recipes. So I usually take that extra step to prevent a mess, just in case it happens.

baking for the keto diet

The next step is to open the oven door and start baking your perfect dessert.

Bake the entire cheesecake for 45-50 minutes in an oven heated to 325 degrees. Let the cheesecake cool completely before removing it from the spring form pan.

Tips for Making this Low Carb Cheesecake Recipe Even Better

Making this sugar free cheesecake exactly as the recipe calls is all you need to do to create the best keto cheesecake.

But maybe you want to try something different or are out of some ingredients and you want to switch things up. If that is the case you can try some of the variations below.

Add Fresh Berries

There are many keto-friendly berries that would be great served alongside this cheesecake recipe.

Strawberries are usually my go-to but blueberries and raspberries would also be great options. Just keep in mind that this will increase the grams of net carbs you are consuming.

If you aren’t eating the entire cheesecake in one sitting and only serving up individual slices, adding a little fruit can fit into a keto diet.

Add Lemon Zest

This is something I have experimented with many times but felt that the extra 0.3 g net carbs per teaspoon of lemon zest were not worth the boost of flavor in this recipe.

When choosing ways to make this recipe work best for your diet, be sure to look into the nutrition information of each additional ingredient to stay on track.

Add Heavy Cream

Heavy cream is keto friendly and offers a sweet taste as well as the ability to make your cheesecake even creamier!

Add Pumpkin

Adding pumpkin and some of the typical spices found in pumpkin pie can easily transform this keto cheesecake into a keto pumpkin cheesecake. You won’t even need to use a larger pan because the great thing about the pan I use for this recipe is that there is plenty of room left over for more cheesecake batter.

Add Whipped Cream

If you haven’t already, you have to see this easy recipe. You won’t believe how easy it is to make your own sugar-free whipped cream.

How to Store this Low Carb Cheesecake Recipe

You can store this cheesecake in an airtight container for up to one week, maybe longer but I would suggest freezing anything that you plan on eating after that amount of time.

This recipe freezes pretty well but it can tend to get a little messy when left out to thaw. This could take a few hours depending on the temperature settings of your freezer.

My suggestion would be to store it on a sheet of plastic wrap inside an airtight container. This way, the next time you pull it out you won’t have a mess or a soggy cheesecake.

If you are in a rush for this cheesecake to thaw out from the freezer, place the container in hot water to help speed up the process but be sure to not allow water to get inside.
