What You’ll Need to Make this Low Carb Cheesecake Recipe
This recipe is made up of two simple parts, the crust, and the cheesecake batter. The crust calls for almond flour, butter, and cinnamon. Three simple ingredients that most people following a keto lifestyle have on hand.
The center of the cheesecake is made up of two blocks of cream cheese, sour cream, stevia, eggs, vanilla, and lemon juice, much like the classic dessert.
The only thing that is really different about this sugar free dessert is the stevia but the good news is that if you have made other keto desserts you probably have that on hand already.
How to Make this Low Carb Cheesecake Recipe
The first step in this recipe is to mix the crust ingredients together. I use a stand mixer to do this but you can use a spoon, food processor, electric mixer, or hand mixer if you prefer.
Just be sure to use melted butter for the best results. After the ingredients are combined, press them into the bottom of a springform pan. No need to press against the sides of the pan, only the bottom of the pan needs a crust, not the edges of the cake.
Bake the crust in an oven heated at 325 degrees for 9-10 minutes.

To avoid a lumpy cheesecake, place the cream cheese in a microwave-safe bowl and heat it up for about 20-30 seconds. Not to the point where it melts but just soft enough to easily be whipped by a mixer then add the cream cheese to a large bowl.
Next, add in the sour cream, stevia, and mix until well combined. Then add in the lemon juice, vanilla, and eggs. Mix until everything is well combined before pouring it into the already-baked crust in the spring form pan.
Tips for Using a Springform Pan for Baked Cheesecake
If your springform pan leaks, you can place the prepared pan on a baking sheet to prevent any leaks in the oven.
I haven’t experienced any leaks in my springform pan when I bake cheesecake but I have had leaks when making other keto recipes. So I usually take that extra step to prevent a mess, just in case it happens.
The next step is to open the oven door and start baking your perfect dessert.
Bake the entire cheesecake for 45-50 minutes in an oven heated to 325 degrees. Let the cheesecake cool completely before removing it from the spring form pan.
Tips for Making this Low Carb Cheesecake Recipe Even Better
Making this sugar free cheesecake exactly as the recipe calls is all you need to do to create the best keto cheesecake.

You can store this cheesecake in an airtight container for up to one week, maybe longer but I would suggest freezing anything that you plan on eating after that amount of time.
This recipe freezes pretty well but it can tend to get a little messy when left out to thaw. This could take a few hours depending on the temperature settings of your freezer.
My suggestion would be to store it on a sheet of plastic wrap inside an airtight container. This way, the next time you pull it out you won’t have a mess or a soggy cheesecake.
If you are in a rush for this cheesecake to thaw out from the freezer, place the container in hot water to help speed up the process but be sure to not allow water to get inside.
