Tips for the Best Air Fryer Keto Biscuits

If you’re aiming for the perfect low carb biscuit texture and wondering how to make biscuits fluffy with almond flour, these tips will get you there.

  • Don’t pack the almond flour: Lightly spoon almond flour into your measuring cup instead of scooping. This prevents overly dense, dry biscuits and helps keep the texture soft.
  • Use finely sifted almond flour: If you’ve been wondering how to make biscuits fluffy with almond flour, the secret is using blanched, superfine almond flour. Coarser varieties can make biscuits gritty or heavy.
  • Add extra moisture if needed: Almond flour can vary by brand. If the dough feels dry, add a small splash of sour cream or melted butter to ensure a moist, tender crumb.
  • Chill the dough briefly (optional): For thicker, more structured biscuits, refrigerate the dough for 5–10 minutes before air frying.
  • Don’t overmix: Mix just until everything is combined. Overmixing can deflate the batter and lead to dense biscuits.
  • Give them room to rise: Place dough scoops with space between them in the air fryer basket. This allows hot air to circulate, giving you a crisp exterior and soft, fluffy inside.
  • Want taller biscuits? Use silicone muffin cups or greased ramekins to help your almond flour biscuits rise higher and hold their shape better.

How to Make Keto Biscuits in the Air Fryer

Making biscuits in the air fryer is simple and fast. Plus, cleanup is easy!

While the dough may be slightly sticky, it’s easy to handle, and you can shape the biscuits however you like.

  • Line the bottom of the air fryer basket with parchment paper and drop spoonfuls of dough onto it. This yields round, slightly rustic biscuits.
  • For taller, muffin-style biscuits, place the dough in greased cupcake liners or silicone molds. These are great for presentation at holiday dinners or gatherings.

There’s no wrong way to shape these biscuits, so feel free to experiment with what works best for you!

Ingredients

  • 1 cup of Almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon pink Himalayan salt
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 2 tablespoons melted butter
  • 2 tablespoons sour cream

  1. These were delicious and super fast! I only got 6 (but large) biscuits. 4 in the first go and two the second round through the air fryer. I couldn’t the middles to cook all the way through, so I flipped them and cooked an additional 3-4 minutes. They came out a little flatter due to me flipping them but still beautiful and delicious. My kiddos and hubby devoured them. Thanks for such a quick and delicious recipe! Shared with friends and family who are also doing keto.
