I love making recipes in the air fryer, it saves time and of course, is a healthier alternative to deep-frying. 

Whenever I want a quick snack or crave something crispy, my air fryer is my go-to appliance. 

I use my air fryer almost daily and I try to create as many new recipes using the air fryer as possible. 

Experimenting in the kitchen is one of my favorite hobbies and whenever I am able to recreate a deep-fried recipe using the air fryer with great results, I get excited. 

Usually, this leads to more experimenting with the air fryer and before I know it, there are five different meals in the experimental stage waiting for my family to give their feedback.

My daughter has been pretty good about trying new things and although she doesn’t follow any special diets like Keto, she is usually pretty open to giving me her real opinion on the recipes I create. 

Even when the recipes include ingredients that she has never heard of and most of the time would never want to try, she is a good sport.

I like trying Specific Carbohydrate diet, low carb, and keto recipes out on her especially because she has no reason to eat this way, so I know she will give me a real unbiased review. 

She took one for the team and tried some of these crispy air fryer zucchini chips. Luckily, this low-carb snack got her seal of approval, so now I can share these keto chips with you.

What is the Best Air Fryer for Making Crispy Zucchini Chips? 

While you can use almost any air fryer that you choose to make crispy zucchini chips, personally my favorite air fryer to use is the PowerXL Air Fryer Pro. I prefer using this type for this air fryer zucchini recipe because I can place the chips in a single layer and don’t have to struggle with an air fryer basket.

I have used quite a few different air fryers over the years and have found that this is the best setup for me, plus I love that it can be used to replace so many other kitchen appliances. 

We use our air fryer instead of the microwave for heating things up to a perfect crisp rather than making them soggy like most microwaves tend to do.

It’s also nice that this air fryer has a built-in rotisserie which allows me to make the perfect rotisserie chicken in under an hour. 

I used to have a countertop rotisserie and it took up way too much space so it’s nice to have the ability to make a rotisserie chicken whenever I want, without having to pull out another appliance.

What You Will Need to Make Crispy Air Fryer Zucchini Chips

You will need a mandoline to slice the zucchini although you could use a knife although I find it is much easier to use a mandoline if you have one. 

For the ingredients, you will need 1 Zucchini, and you don’t have to peel it, I prefer to leave the skin on but if you can remove it if you’d like. 

For the breading, I use 3 Tablespoons of Parmesan cheese, 1 and a 1/2 Tablespoons of Almond Flour, and 20 Pork Rinds. 

To make the breading stick I use 1 beaten Egg and spray each chip with an Olive Oil Spray before cooking.

Can You Make Zucchini Chips in the Oven Instead of an Air Fryer? 

Yes! This method will take quite a bit longer but it can be done.

Set your oven to 225 degrees and cook for about 2 hours. 

Using baking racks rather than baking sheets will allow for more even cooking but be sure to cover them with parchment paper because these chips will stick to the rack.

Be sure to check the chips halfway through the cooking process to make sure that they are all cooking evenly. 

You may even want to flip the chips around halfway through the cooking process to ensure each side is cooked to a perfect crisp.

How to Make Air Fryer Zucchini Chips 

Add pork rinds, almond flour, and parmesan cheese to a food processor.

Process until you are left with a fine crumbly mixture. Pour into a small bowl, set aside. In another bowl beat an egg and then set it aside.

Slice a zucchini using a mandoline set at 1/38.

If you do not own a mandoline you can slice the zucchini with a knife. Be sure to slice very thin and as evenly as possible.

Dip the slices of zucchini into the egg then dip it into the pork rind mixture.

If the mixture clumps together while dipping and breading the zucchini slices, pour it back into the food processor until it is crumbly again.

This may need to be done a total of 3-4 times when making this recipe.

Spread out onto air fryer racks that are covered with parchment paper, leaving a small space in between.

Spray the slices with a light coating of olive oil.

Bake at 400 degrees and check the top rack after 10 minutes, switch racks around to ensure each rack is evenly cooked every five minutes until done.

Cooking time will vary depending on the space in between each slice and the size of your air fryer. The total cooking time will vary between 15- 25 minutes.

Tips for Making Crispy Air Fryer Zucchini Chips

When using several racks in your air fryer to make zucchini chips, it is important to alternate the racks during the cooking process. 

The top rack will cook faster than the rest. That means it is important to prevent burning the top layer. It is also important to keep the bottom layer from being soggy is key to creating the perfect crispy zucchini chips.

Variations of this Air Fryer Zucchini Recipe

If you are not following a low-carb diet and can spare the extra carbs, add panko bread crumbs for a similar crunch with a bold flavor.

If you are looking for low-carb ways to add a new flavor to this keto-friendly recipe you may want to give some of these suggestions a try.

Adding a little bit of lemon juice before air frying can give this zucchini chip a delicious citrus flavor. It will also give these chips a beautiful golden brown color.

Another favorite way to switch up this recipe is to add bagel seasoning.

Sprinkle some of your favorite seasonings on top for an extra burst of flavor. I like to add Italian seasoning, kosher salt, or garlic powder, depending on what kind of mood I am in.

If I want an extra crispy burst of flavor, I spray cooking spray on zucchini chips before adding the seasoning. This helps to make the seasonings stick throughout the cooking process.

Pairing Ideas for this Air Fryer Zucchini Recipe

These chips pair well with a variety of dips like ranch dressing or a cheese sauce. I also enjoy them when they are served alongside Marinara sauce. Both are great options if you are looking for low-carb-friendly dipping ideas.

They are a great replacement for traditional potato chips and have minimal oil. Which makes it the perfect side dish! Or a great appetizer for those looking for a healthy snack with less fat.

How to Store the Air Fryer Zucchini Recipe Leftovers

Be sure to use an air-tight container to store these chips. If stored properly zucchini rounds should taste like fresh zucchini chips with a great flavor long after making them.

When stored in the proper container, these zucchini chips should have the same great flavor that you enjoyed the first time you made them.

I would suggest eating them within one month of making them. Storing them in the refrigerator inside of an airtight container is best.

These look delicious! This would be perfect at the end of the summer when there is so much homegrown zucchini in the garden that I am trying to use up. My kids would enjoy these too. I think they would be perfect dipped in sour cream with herbs.
