Instructions

  1. Start with six potatoes when I make this recipe and after thoroughly cleaning them, I drizzle a bit of olive oil on top, I then rub the oil around the entire potato with my hands, ensuring good even coverage.
  2. The next step is to pop those oily fellas into the air fryer for about 30 minutes at 400 degrees. The time could vary slightly depending on how many potatoes you make and how big they are. When its time to take the potatoes out of the air fryer just be sure they are soft before moving on to the next step.
  3. After letting them cool for a few minutes, you are just bringing them down to a temperature that makes handling them bearable, slice them in half.
  4. Using a spoon, dig out the middle being careful to not hit the edge and disturb the outer skin. Place the content of the potato in a bowl and set all of the potato skins aside.
  5. In a mixing bowl mix together the potatoes, butter, milk, and seasonings. Once everything is completely combined, scoop the mixture into the potato shells and sprinkle with cheese. Pop them back into the air fryer set at 400 degrees for another 10- 15 minutes depending on the size of the potato and amount of cheese on top. Cook until the cheese is completely melted.
  6. Once the twice baked potatoes are done, top them with sour cream and a sprinkle of chives.
