I have always loved cheesecake and like most people, I have always loved ice cream, so it was only a matter of time before I put the two together by creating Cheesecake Ice Cream.
What I didn’t expect is that my non-cheesecake-loving husband would enjoy it so much!
Apparently, this easy peasy rich, and creamy cheesecake recipe is not just for cheesecake lovers, ice cream lovers will devour it too!

Where I grew up, cheesecake was a big deal, I’m talking Golden Girls cheesecake obsession kind of big deal.
Every place we dined served it and it was fantastic! My favorite was from a place called Monte’s Cafe in South Amboy New Jersey, they are no longer there but I will never forget how much I enjoyed the cheesecake they made.

I passed this obsession onto my daughter and she has been requesting that I bake a cheesecake soon but it’s over 100 degrees outside and ice cream seems like the smarter choice right now. When the craving hit, I knew I had to experiment like a mad scientist until I found the perfect cheesecake ice cream recipe.

This ice cream is pretty simple to make and only requires 5 ingredients. Vanilla & Lemon Pudding mix, 2 Cans of condensed milk, 2 Tablespoons of Vanilla, and 1 Package of Cream Cheese.
Using a whisk attachment on your mixer, mix the lemon & vanilla pudding mix with the brick of cream cheese. Slowly add 2 cans of condensed milk and vanilla.
When I say slowly I mean really really slowly, this can create quite a mess in the kitchen if you are as impatient as I was to try this out.
You can see the drips on the bowl rim because right before I took this picture of the ice cream, I sprayed it all over my kitchen because I used the wrong attachment and went way too fast!
Be sure to use the whisk attachment and add the milk slowly to prevent spraying your whole kitchen with ice cream.

After mixing thoroughly add the mixture to an ice cream maker for 20-25 minutes.
Serve immediately and freeze leftovers, if there are any, be sure to take the ice cream out of the freezer at least a half hour before serving again.
It will get pretty hard in the freezer but if you just can’t wait for the time it takes to soften, pop the container into the microwave for a couple of minutes checking the consistency between each minute.
