My daughter is the original inspiration behind this Taco Casserole Recipe. She not only came up with the idea, but she also shot the video posted below, directed it, edited it, and then sent it over to me to share.

Plus she did all of this in record time. As a blogger and a parent,  I am always amazed at how talented she is, excelling at the same things that I work so hard at just trying to be average at, I could not be prouder of her.

As a mom, I still think of that innocent, helpless baby when I think about her. I forget that all of the hard work and time I put into being the best mom I can be is for the bigger picture.

Someday she will move out of my house, have her own life, become a productive member of society. She will have a boss someday, she will most likely be a boss someday.

She will probably get married, I will worry then that he isn’t good enough. I will threaten his life when I think he has hurt her, I will struggle with letting go when it’s time, I already do.

I always worry about her and probably always will. I worry that the world will not celebrate her the way I see fit, I worry that they won’t deserve her or acknowledge her full potential as a person.

Seeing the way she worked on this project, then seeing the final video of this Taco Casserole Recipe gives me a calm feeling knowing that she is going to do great things in life, she will have a shot at a rewarding career someday.

While making the video, I observed how much fun she had working on it which lets me know that she will be happy. She loves making movies, taking pictures, being creative, and really stands out in a great way. She is already doing great things and this isn’t the first time she was noticed for it either.

When she was talking to the judges at the second level Invention Convention, which she ultimately won and went on to state to compete, she had an interesting conversation with one man who tracked down the administrator of the event to pass along a message.

His message that we later heard when parents were allowed back into the auditorium stated that he doesn’t know what she will go on to study in college or where her career path will take her but he wants to make it clear now that he would hire her on the spot, no questions asked, no degree needed.

He was blown away by her, he could tell she was brilliant and had something that stood out above the rest.

It turns out he was an engineer at HP, seems like a guy that knew what he was talking about.

Cooking is something that we started doing together when she was little but she really didn’t start getting serious about it until last year.

She makes some amazing cookies, delicious breadsticks, and a few other specialties but my favorite recipe so far is this Taco Casserole Recipe.

All you have to do to make this Taco Casserole Recipe is brown some ground beef, layer your ingredients, leaving out the tomatoes and sour cream, in a casserole pan, and bake for about 15 – 20 minutes at 375 degrees.

Ingredients

  • 1 Lb Ground Beef
  • 1 Cup of Taco Seasoning
  • 1/3 Cup of Water
  • 1/2 Cup of Sour Cream
  • 2 Roma Tomatoes
  • 1/2 Cup of Cheese
  • 1 Jar of Salsa
  • Tortilla Chips
  • 16 ounces of Refried beans

Instructions

  1. Brown the ground beef and add in taco seasoning and water. Cook until well mixed.
  2. In casserole dish put a layer of tortilla chips on the bottom of the dish.
  3. Add in refried beans and then a layer of ground beef.
  4. Sprinkle a layer of cheese and then sour cream. Add Roma tomatoes to top.
  5. Bake at 375 for about 15-20 minutes.
