Whether you are on the Specific Carbohydrate diet or just want to eat a little healthier, the SCD recipes I post are both yummy and good for you. When I call a recipe “clean” I mean it is dairy free and sugar free, it’s free of preservatives and completely SCD Legal. It’s understandable to be a little skeptical when the title reads Clean Ice Cream Sandwich Recipe but I assure you this recipe is not only clean but very tasty!

After you get these tasty treats out of the oven be sure to let them cool while you get started on the ice cream for the middle of this delicious sandwich.

Now after you have all of your ingredients prepared let’s get started building that sandwich.
Load that cookie up with a generous amount of ice cream! Try to do this quickly because as the ice cream melts this job not only becomes harder but very very messy!
Put the ice cream slathered cookie onto a sheet of aluminum foil and top it with another cookie.
Wrap up the sandwich making sure it stays in the proper position. As it freezes, if the ice cream is touching the foil it may freeze to it and make it hard to unwrap later.
Place it in the refrigerator and let freeze for at least and hour. If you plan on storing for months at a time place each individually wrapped ice cream sandwich into freezer bags or containers. Store a bunch for an easy,quick, and healthy dessert option for you and the kids!
